Alex and I love drinks: cocktails, mocktails, coffee, tea… In the evenings we often have a drink together. This ginger tea is cozy and warm: full of spicy ginger flavors, with hints of tart lemon and sweet honey. It’s a good substitute for coffee when trying to avoid caffeine. And it has potential health benefits like aiding digestion, reducing inflammation, and more! Here’s how to make this easy DIY ginger drink.
How to make ginger tea
Ginger tea is easy to prepare and perfect for using up extra fresh ginger. Alex and I actually discovered this when we accidentally had way more ginger than we needed. Who knew you could just grate and add water for an easy DIY herbal tea? The method we use is for a single serving of ginger tea. Here’s the best way we found to do that:
- Boil: Boil a pot of water. We use a kettle (we also use it for our morning coffee).
- Peel and grate the ginger and place in a tea strainer: Finely grate your ginger. See below for a tip on peeling!
- Soaking: Fill a cup with boiling water. Leave for 5 minutes.
- Add the honey: The addition of honey is essential: it brings out all the flavor of ginger. If desired, sprinkle on some lemon juice as well.

A tip for peeling the ginger root
A challenge for home cooks working with fresh ginger is peeling! Ginger root is bumpy with lots of pimples and the skin is quite tough. Here is a tip on how best to peel fresh ginger: Peel it with a spoon! It sounds weird until you try. A spoon effortlessly peels the odd shapes out of ginger, much better than a vegetable peeler. Try it and you will be amazed at how well it works!

- 1 ¼ cup (10 ounces) boiling water
- 1 teaspoon Honey
- 1 slice of lemon
- Boil the water.
- Meanwhile, peel the ginger with a spoon and grate finely with a grater or micrograter.
