  • Use whole milk or 2% milk. Milk fat helps achieve the desired texture.

The key to a frittata recipe is to watch it closely as you cook it! You will cook it in two parts: first the stove, then the oven. Here’s what to look for:

  • Cook on stovetop until the top is firm and the underside is lightly browned. Don’t cook too long or it will turn too golden in the oven! We like to use a spatula to pull out the sides and see if it sets up.
  • Bake for 10 to 12 minutes until the top is set. You want it to set to a solid texture at the top.

How to Make a Frittata Recipe: An Easy Breakfast, Lunch, or Dinner! This basic stuffing idea is quick and delicious, or whatever veggies you have on hand.


  • 8th Big Eggs
  • ¼ cup Milk (whole or 2%)
  • ½ teaspoon dried oregano
  • ½ teaspoon kosher salt
  • ¼ cup grated parmesan cheese
  • ½ cup crumbled feta, plus more for sprinkling*
  • 1 tbsp olive oil
  • 5 ounces (At 6 cups) packaged spinach leaves
  • ¼ teaspoon garlic powder
  • Freshly ground black pepper
  • Optional: fresh basil leaves for garnish

  1. Preheat oven to 400°F.

  2. In a medium bowl, whisk together eggs, milk, oregano, kosher salt, and freshly ground pepper. Whisk together the parmesan and feta.

  3. In a 10-inch ovenproof skillet, heat the olive oil over medium-high heat. Sauté the spinach leaves for 2 to 3 minutes until wilted, tossing as they cook to evenly distribute the oil along the sides of the pan. Add the garlic powder and 2 pinches of kosher salt and sauté for another minute.

  4. Pour the egg mixture into the pan. If necessary, use a fork to arrange the spinach into an even layer so you can see if it’s on top. Sprinkle the top with a little more feta cheese. Bake over medium-high heat until bottom is set and lightly browned, about 5 to 7 minutes, checking if done by flicking on the side with a spatula.

  5. Place pan in oven and bake 10 to 12 minutes, until top is puffed, firm and lightly browned. Let stand 10 minutes, then cut into wedges and serve warm, with sour cream or crème fraîche if desired. Leftovers keep well: refrigerate for up to 5 days and serve cold, at room temperature, or warmed up.

*Or use goat cheese crumbs or mozzarella and add an extra pinch of salt.
