Key Ingredient: Chipotle Peppers in Adobo Sauce

The most important ingredient in this fajita sauce? Adobe sauce. There is no perfect substitute for this magical ingredient, so you should find the real one. The Adobo sauce adds a smoky undertone and an impossible-to-reproduce complexity! Here’s more information on this particular ingredient if you’ve never used it before:

  • Chipotle Peppers in Adobo Sauce are easy to find at most grocery stores near Mexican produce. The box includes chipotle peppers: smoked and dried jalapeños that are rehydrated and canned, and adobo sauce, a puree made with tomatoes, vinegar, garlic, and other spices.
  • You use the sauce, not the chipotle peppers. Using a spoon, scoop the adobo sauce out of the can, working around the peppers.
  • The sauce adds a moderate spiciness. It’s not super spicy. Use 1 tbsp for a mild fajita sauce and 2 tbsp for a moderately hot (not even medium) sauce.
  • What to do with leftovers Refrigerate or freeze the rest and use in other adobo sauce recipes like tortilla soup, chipotle ranch dressing, or enchilada sauce.
