This cilantro lime rice recipe is quick and easy, with just a few extra steps to cooking one pot of rice. But for the amount of flavor it adds, you’ll want to make it this way every time! It takes a pot of rice from bland to irresistible. Here are the basic steps:

  • Cook the rice. It just starts! Use any long grain rice.
  • Stir in the salt and garlic powder, then steam for 10 minutes. Take the rice off the stove. Quickly uncover and add garlic powder and salt, then cover and steam. This allows the spices to steep while the rice steams.
  • Stir in the chopped cilantro, lime juice, and lime zest. Next, uncover and stir in the cilantro and lime! Using the juice and zest adds a tart flavor to the whole pot.

Use brown rice or white rice (make sure it’s long grain)

In our personal opinion, white rice tastes better than cilantro lime rice. But do you prefer brown rice? Brown rice over white rice has some health benefits. Use both here! Here’s what you need to know:

  • Either way, use long grain rice. The short grain doesn’t offer the best texture for this type of rice.
  • Brown rice works with the same instructions: just cook for 45 minutes instead of 15!

The serving size of this cilantro lime rice recipe

This recipe is written for 1 cup of rice, which experts say is usually 4 servings of rice. But that’s a pretty modest portion if you ask us! We wrote the following recipe for 1 cup of rice for ease of propagation in larger quantities. Use the ratio 1 cup of dry rice equals 3 cups of cooked rice.

  • Make 1.5 times the recipe to get about 1 cup of rice per serving.
  • Or double the recipe for a total of 6 cups. It also makes more for leftovers! Remember that when reheating rice, add a few tablespoons of water to help rehydrate it.

How to chop cilantro… fast!

The only area of ​​technique in this cilantro lime rice recipe? Chop coriander! If you are not used to this, it may seem time consuming. Luckily we have a quick way to do this:

  • Remove Leaves Quickly: Hold the coriander roots with your non-cutting hand. Use a large chef’s knife to scrape the leaves in a downward motion. Then use your fingers to pull the large stalks off the coriander leaves.
  • Chop coriander: Hold the tip of the blade with your non-cutting hand and rock the blade back and forth to chop the cilantro. Bring back the leaves in a pile and go over them several times with the knife until the pieces are the size you want!

  • 1 cup*white long grain rice**
  • ½ teaspoon kosher salt
  • ½ teaspoon garlic powder
  • ¼ cup finely chopped coriander
  • 1 tbsp coconut oil
  • 2 tablespoons lime juice
  • 1 teaspoon lime zest

  1. Place the rice in a saucepan with 2 cups of water. Bring to a boil, then cover and simmer for 15 minutes or until water has completely evaporated. While the rice is cooking, prepare the cilantro, lime juice, and lime zest.
  2. Remove lid and stir in salt and garlic powder. Put the lid back on and steam for 10 minutes. Uncover and stir in the cilantro, coconut oil, lime juice, and lime zest. Refrigerate leftovers; To reheat, heat on the stovetop or in the microwave with a few tablespoons of water until hot and moist (a pinch of salt may need to be added).

*This recipe makes 4 modest servings. For larger servings, make 1.5 or 2 times the recipe.

**You can also use this method with brown rice if you wish. Follow the same directions but simmer for 45 minutes in step 1.
