Of course, the Brussels sprouts are transcendentally crispy roasted with a maple glaze. But shaving them raw in a salad is the best way to eat them! Raw greens aren’t bitter at all: they’re sweet and feathery, with an irresistibly savory flavor. Pair them with a sweet and tangy Djion mustard dressing, apples and dried cherries and they’re pretty damn perfect. Ready to shred?

There are so many ways to make a great Brussels sprouts salad recipe: here’s our favorite – and we’ll give you a few variations and options below. We put this in our salad:

  • Crunchy Green Leaves: We used escarole, but it’s optional
  • Apple: Apple and Brussels are a classic combination
  • Dried Cherries: Use unsweetened tart cherries if you can find them.
  • Almonds: Marcona almonds have great flavor, or use whatever you can find
  • Crumbled feta, optional: Feta is delicious, but this salad is delicious without it.
  • Dijon dressing: Top with our favorite Dijon Mustard Dressing for all the goodness

How to grate Brussels sprouts

The most time-consuming part of making Brussels sprouts salad is… shaving the Brussels sprouts! There are several ways to do this: and all you need is a chef’s knife. However, if you have sophisticated equipment, it will speed up the process significantly. Here’s what you need to know:

  • Knife: Use your fingers to remove any hard outer layers. Halve the Brussels sprouts lengthwise. Lay cut-side down and scrape thinly across to create shreds. Separate the scraps with your fingers. Discard the root end.
  • Culinary Robot : Use the slicing disc of a food processor. Arrange the Brussels sprouts up and down one at a time, creating long, thin ribbons.
  • Mandolin: Put on the protective gloves that came with the mandolin. Using the mandolin attachment, shave each shoot from tip to end.

  • Pear can replace the apple

For the salad

  • 1 Pound Brussels sprouts, enough for 4 cups of shredded (or 8 ounces shredded)
  • 1 ½ cups chopped escarole or other crisp green leaves, optional
  • 1 large crispy-spicy red apple (honeycrisp type)
  • ½ cup dried sour cherries
  • ½ cup Almonds (Marcona almonds if possible)
  • ¼ teaspoon kosher salt
  • 1 Dijon Mustard Vinaigrette recipe
  • Crumbled feta cheese, optional (omit for vegans)

  1. Grate the Brussels sprouts: grate further into Brussels sprouts. Or, using a food processor blade or mandoline slicer, slice each sprout from top to bottom.
  2. Prepare the vegetables: Chop the escarole or other green leaves. Dice the apple.
  3. Prepare dressing: In a medium bowl, whisk together Dijon mustard, white wine vinegar, maple syrup, and salt. Then whisk in the olive oil, 1 tablespoon at a time, until you have a creamy dressing.
  4. Assemble the salad: Mix all salad ingredients. Mix with ½ cup dressing (add more if you like). Garnish with crumbled feta, if desired, and serve.
