Beet Smoothie

Do you want to eat more beets? Try one Beet smoothie: the perfect way to incorporate beets into your diet with a delicious fruit flavor. You don’t even have to worry about cooking beets! Peel it and toss it raw, and it adds the most vibrant color to this mash. It’s the perfect way to use up beets you don’t know what to do with. Alex and I were a bit skeptical about the taste of a beetroot smoothie. (Too much beet…?) But it came out with the best sweet flavor balanced by banana, apple and pineapple! Here’s how to do it.

Ingredients for this beetroot smoothie

Turnips are usually eaten boiled. But you can use a raw beetroot in this beetroot smoothie! Just make sure to take precautions against beet juice when peeling it: it can stain your hands and clothes! What you need for a beetroot smoothie:

  • Beetroot raw: Yes, peel, dice and put in the blender!
  • Green apple: Beets and apples go well together. That’s the key to many smoothies: it adds sweetness and texture.
  • Banana: The banana adds a creamy texture and more sweetness.
  • Frozen pineapple: Here’s the kicker: it enhances the flavor of the sweet cake and adds the right glazed texture.
  • water and ice: Ice and water add texture and body.

Need to peel beets for smoothies?

Yes! Beetroot skin is tough and can make a beet smoothie grainy. Take 1 minute to peel the beetroot and you will end up with a creamier puree.

Can I use cooked beets instead of raw?

You can use cooked or raw beets in a smoothie! If you have already cooked beets on hand, a smoothie is a great place to use them. Or packaged boiled beets are easy to find in grocery stores. A pack of these is also great for smoothies.

How to add protein to this beet smoothie

Alone, this beet smoothie is packed with flavor and nutrients. But are you looking for a protein smoothie for an extensive breakfast or a snack? Here are some ideas for adding protein:

  • Greek yogurt: Prepare a creamy beetroot smoothie! Add ¼ to ½ cup of Greek yogurt for a protein boost and probiotics for a healthy gut. If necessary, add a few drops of water to mix well. This will lighten the color a bit to a lighter pink.
  • nut butter. Add almond butter or cashew butter to the mix! Start with 1 tbsp and add more as needed. It will also change color a bit.
