Many include sausage, but ours is a vegetarian version that’s an easier step but is still packed with flavor. What you need for this baked ziti recipe:

This Baked Ziti uses a combination of store-bought marinara sauce and homemade flavors to make a quick homemade sauce. The key? Canned tomatoes roasted over fire. Here’s what you should know about this strain:

  • Roasted Tomatoes are a type of canned tomatoes that are roasted over a flame before canning. They are sold by several different brands; look for them in the canned tomatoes section of your local grocery store. We love Muir Glen.
  • Fire roasted tomatoes taste sweet straight out of the can. That means you can cook them for less time than regular tomatoes.
  • What can I substitute for fire roasted tomatoes? Use the highest quality canned tomatoes you can find. Remember to add 1 teaspoon sugar and a touch of smoked paprika (½ teaspoon) if you have it to round out the flavor.

Cook the ziti al dente shortly beforehand

The key to baked noodles? Cook the pasta al dente shortly beforehand. Baked noodles cook while they’re in the oven, so you’ll want to remove them from the boiling water just before you normally do. Try about 1-2 minutes before it’s al dente, so it should still be crispy.

Note: Normally the instructions on the pasta package say to overcook a little! So cook it about 3 minutes before the package directions say.

This baked ziti recipe makes a large 9 x 13″ casserole that feeds at least 8 servings. Don’t feel like such a large portion? Make half a recipe in 9 x 9! It works just as well, especially since these pastas are tastier the day they’re made. But it also works as leftovers!

Leftover baked ziti will keep in the refrigerator for up to 3 days. These baked noodles taste best on the days they are made, as the noodles can get a little soggy over time. (All the more reason not to overcook pasta!) If you’re eating leftovers, add a few pinches of salt and reheat in a pan to bring out the flavors.

  • 1 pound ziti pasta (or penne or rigatoni)*
  • 4 Garlic cloves
  • 2 teaspoons fennel seeds
  • 2 tablespoons olive oil
  • 241 jar of marinara sauce
  • 281 ounce fire roasted tomatoes, mashed
  • 1 pounds of ricotta cheese
  • ¾ cup grated parmesan cheese
  • 6 ounces grated mozzarella cheese
  • seasoning of 1/2 lemon
  • Kosher salt and freshly ground black pepper
  • basil leaves for garnish (optional)

  1. Preheat the oven to 425 degrees Fahrenheit.
  2. Bring a large pot of lightly salted water to a boil. Cook the pasta 2 minutes less than al dente (about 3 minutes before package directions say). Drain the noodles and put them back into the pot. If cooking before the sauce is ready, add a drizzle of olive oil to prevent sticking.
  3. Meanwhile chop the garlic. In a medium-sized saucepan, heat the olive oil. Add the garlic and fennel seeds, crushing the fennel with your fingers while adding, and sauté for 1 minute. Add marinara sauce and fire roasted tomatoes and stir to combine. Simmer for 10 minutes, then taste and add a pinch of salt if flavor doesn’t come out (this depends on the marinara brand). Then pour the tomato sauce over the drained pasta and mix.
  4. In a medium bowl, mix together the ricotta cheese, ½ cup grated parmesan, ¾ cup mozzarella cheese, lemon zest, ¾ teaspoon kosher salt, and a few black peppercorns.
  5. Grease a 9″ x 13″* casserole dish. Pour the pasta mixed with the tomato sauce. Scoop large spoonfuls of the ricotta mixture over the pasta, then scoop it over the pasta with the side of a large spoon, leaving larger pockets of ricotta. Top with remaining ¾ cup mozzarella cheese and remaining ¼ cup parmesan.
  6. Bake for 30 minutes or until cheese is melted and golden on top. Let stand 10 minutes before serving. Garnish with basil leaves, if you like, and serve. Leftovers keep in the fridge for up to 3 days, but taste better the same day (add a few pinches of salt and heat in a pan to revitalize the flavors).
