This is especially useful for a recipe that you’ll likely be preparing while trying to make a main dish at the same time. Better yet, make this sauce earlier in the week and use it in meals throughout the week. Here’s what you need, plus salt (or continue with the recipe below):

  • Ripe avocado

Creamy Greek yogurt is often used as a substitute for sour cream in sauces, and here we’ve used it as the base for this delicious cream sauce. Yogurt adds a nice kick to the flavor, and even better, it cuts the calories by about a third.

A cup of sour cream contains 445 calories, while a cup of Greek yogurt contains 100 calories. Because the taste is usually just as good, we typically use Greek yogurt in all of our sauces and dressings. That’s the magic behind healthy salad dressings like our favorite Green Goddess dressing.

This avocado sauce is not only delicious and versatile: it stays green for days. That’s right: no crazy tricks like applying water or plastic wrap like you’ll hear about guacamole. How it works? The acidity of the lime juice naturally turns the avocado green. It sounds crazy, but try it: it works!

This avocado sauce will keep in the fridge for up to 5 days. (Full disclosure: We kept it longer and it still tasted great!) So it’s great for making meals earlier in the week and using it throughout the week.

  • 1 ripe avocado
  • ½ cup Greek yogurt (or sour cream)
  • 3 tablespoons lime juice (1 large lime)
  • 2 Handful of fresh coriander, tender leaves and stems
  • ½ teaspoon kosher salt

  1. Halve and pit the avocado and place both halves in a food processor (or small blender).
  2. Add the remaining ingredients and stir until smooth. Store in a sealed jar in the refrigerator for up to 5 days: it will remain green with no specific storage instructions (unlike guacamole).
