Here’s the trick to making a quick and easy corn salad with avocado! It’s perfect for parties and full of zesty flavors.

Here’s a salad that won’t take you half an afternoon to make: it’s quick and easy Lamb’s lettuce with avocado! Avocado corn salad ingredients

This avocado corn salad can be quick and easy, or you can make it a little more sophisticated by using cooked corn on the cob. It’s the perfect summer salad for grilling or grilling, but it’s suitable for all seasons. Here are the main ingredients you will need for this recipe:

The key to this concept? Bought fresh pico de gallo in modern grocery stores. (At least that’s true in US stores!) You might also see it as “fresh salsa” or “salsa fresca.” Why use it for avocado corn salad?

  • Pico de Gallo is a kind of salsa made from fresh tomatoes, onions, garlic, coriander and lime juice.
  • This reduces the hash. You’ll find it in the fresh food section, already chopped and ready to add to your salad!
  • Lime juice makes a natural dressing. Be sure to pour some juice into the mixture. Add a drizzle of olive oil and you’re done!

Alternative: homemade pico

How to cut an avocado: the safest way

Last point for this avocado corn salad: do you know the best way to cut an avocado? This vegetable (well, this fruit!) is known to cause puncture wounds. Here’s how to cut it…safe:

  • Remove the core: Using a large chef’s knife, slice lengthwise around the avocado. Twist the two halves to separate them. Take a towel and put the avocado on it. In one smooth but quick motion, smash the knife into the pit of the avocado, then twist to remove.
  • Safely remove the knife core: Do not remove the avocado stone by hand! Instead, pull the cutting board close to your body, then place the core against the back edge of the cutting board and pull back to free it from the knife. (See the video at the link.)
  • Remove from the skin and cut into slices: Use a large spoon to scoop the avocado out of the skin. Place the avocado cut-side down and slice.

Here’s a quick and easy way to make Avocado Corn Salad! It’s perfect for parties and full of zesty flavors.


  • 2 ripe avocados
  • 15-ounces of corn, drained or 1 ½ cups boiled or roasted corn kernels
  • ¼ cup red onion slices (optional)
  • 1 cup store-bought pico de gallo, aka salsa fresca (including juices)*
  • Fresh coriander for garnish (optional)
  • ½ teaspoon kosher salt
  • 1 drizzle with olive oil

  1. If you are preparing boiled corn, cut the corn kernels off the cob. Otherwise, drain the canned corn.
  2. Dice the avocado. If using, slice the red onion.
  3. Gently toss the chopped avocado, corn, red onion, and cilantro (if using) with the pico de gallo, making sure to add it along with its juice. Add a drizzle of olive oil if you like. The salad tastes best the day it is made. Leftovers are good for 1 day.
