How do you make a house out of almond butter? It’s very simple, but there are a few things to note about the process. Once you master it, you can do it with any nut! Here is the basic concept of this almond butter recipe:

  • Roast nuts: First, toast the almonds in the oven to bring out the flavor. Also, they mix better when warm.
  • Mix them up… for quite a while! After toasting the almonds, throw them in a food processor and blend to what appears to be quiet. You will see that they go through phases: they will be very crumbly at first, then they will become slimy. Eventually they become creamy: the perfect buttery texture. The exact timing depends on the age of the nuts, so it will be different each time.
  • Add oil if necessary. Again, it depends on the almonds used. Sometimes the texture is very dry, just add a little neutral oil to get a creamier texture.

  • Adding liquid to almond butter can make it very thick. Trust us: we learned it the hard way! Adding liquid while mixing the butter can cause it to set and lose its creamy texture. Then you have to add a lot of oil to bring it back to a creamy state.

Food Processor vs Blender

You’ll need a food processor for this almond butter recipe! Here’s the one we recommend. You’ll need a large food processor to accommodate this amount: however, you can reduce it by half if you have a small food processor at home.

Alternative to the food processor: You can also use a high speed blender to make almond butter! If you try it this way, we recommend making 1.5 or 2 times the recipe for easier mixing. Also, use the tamper that comes with the blender to press the almonds down while blending.

Here’s how to make homemade almond butter! This easy recipe makes the dreamiest, creamiest spread for toast, oatmeal and more.


  • 2 cups raw almonds*
  • ½ teaspoon kosher salt
  • Optional additions: ½ teaspoon vanilla extract (or the seeds of a vanilla bean), ¼ teaspoon cinnamon
  • Other ideas: Chai spices or pumpkin spices to taste
  • Grape seed or canola oil (optional)

  1. Preheat the oven to 350 degrees Fahrenheit. Spread the nuts on a rimmed baking sheet. Roast for 7-8 minutes, until fragrant and toasted. Let cool on the baking sheet for a minute or two.
  2. Place almonds in food processor (or high-speed blender)* while still warm. Blend for 1-2 minutes until dry and crumbly. Scratch the bowl.
  3. Turn on the processor and, with the engine running, add ½ teaspoon of kosher salt. Continue processing for 6-9 minutes, scraping the bowl often at first and adding a little oil if the almonds are too dry. (Exact timing depends on the age of the nuts. This process requires several stops and scrapings.) Continue processing until the dry almonds begin to clump together into a ball of dough, and then longer until they begin to form a ball of dough turn into a creamy liquid.
  4. Transfer the almond butter to a jar. Can be kept in the fridge for up to 4 weeks.

Remarks

*You can mix in any other nuts: cashews, pecans, or walnuts are good additions. If you’re using a high speed blender, we recommend using 1.5 to 2 times the recipe and mashing the almonds in with the pestle.
