“These carrots make you want to be vegetarian.” One of my dinner companions explained the roasted carrots on the menu at a restaurant here in Indianapolis. Everyone looked at her skeptically. But when the roasted carrots with cumin came out, everyone exclaimed that they were truly amazing. Tender and flavored with cumin, the carrots were served on a layer of creamy hummus. I’m not sure if anyone decided to go vegetarian that night, but they agreed the roasted carrots were yummy. So I set out to recreate these Roasted Carrots with Cumin at home.

How to make roasted carrots with cumin

When I told Alex about these life-changing roasted carrots with cumin, he was very skeptical. carrots and hummus? Isn’t that fundamental? I wanted to prove him wrong. After a few tries I found this very easy Roasted Carrots with Cumin recipe. Here’s what you need to do:

  1. Find a few bunches of thin carrots, peel them and cut them in half.
  2. In a bowl, mix them with olive oil, cumin, garlic powder and salt.
  3. Place them on a parchment-lined baking sheet and toast at 425 degrees for 20-30 minutes until tender.

This method brings out the sweetness of the roasted carrots but doesn’t overshadow it with the flavors. When I made these, I made a batch of our classic 5 ingredient hummus and placed the carrots on top and placed them in front of Alex. “It tastes way better than carrots and hummus,” he said. Victory!

Tender, sweet carrots are perfect against the savory bite of cumin: and the creamy hummus serves as a dipping sauce that balances the carrots fabulously. As a simple side dish, it’s perfect for entertaining: with or without hummus.

For extra brilliant colors use rainbow carrots which make it even more beautiful. Be sure to buy the skinny, lean carrots that are sold in bunches. You can find them at your local grocery store (we found them at Whole Foods) or, when they’re in season, at the local farmer’s market.

These cumin roasted carrots make a great side dish! Roasted with cumin and olive oil, they are perfectly tender. Serve with hummus if desired.


  • 1 Pound skinny rainbow carrots with spikes, about 2 clusters
  • 2 tablespoons olive oil
  • ½ teaspoon garlic powder
  • 2 teaspoons cumin seeds
  • 1 teaspoon kosher salt
  • Classic homemade hummus
  • 1 a handful of coriander leaves for garnish

  1. Preheat oven to 425F. Cut off the tops of the carrots, leaving about an inch of greens. Peel the carrots, then cut them in half to bring them all to a relatively even thickness; Save only the best whole carrots. You may need to quarter larger carrots.
  2. Line a baking sheet with parchment paper. Place the carrots in the pan, drizzle with olive oil, and sprinkle with garlic powder, cumin, and kosher salt. Mix with your hands until the carrots are evenly coated.
  3. Cook carrots for 20 to 30 minutes or until tender, stirring once. (Cooking time will vary depending on the thickness of the carrots; pierce one of the larger carrots with a fork to gauge how done it is.)
  4. Make the classic 5-ingredient homemade hummus. (Note: I slightly undersalted my portion of hummus for the carrots; feel free to taste and adjust the flavor if needed.) When the carrots are cooked, set out a platter of carrots. Place on top and sprinkle with torn coriander leaves.
