Cucumber is great in salads and sauces… but do we think there’s an even better use for this green vegetable? With drinks! Here’s one that’s absolutely perfect for summer: cucumber lemonade! The vegetable adds a refreshing herbal finish to any drink reminiscent of thermal water. Pair that with the lemon zest and it’s the perfect drink for a summer BBQ on the patio. Ingredients for the cucumber lemonade

Cucumber lemonade is easy to make with a blender to bring out the flavor of this green vegetable. Mix the cucumber with the sugar, then mix with the lemon juice to form a lemonade. You can use any type of pickle you have: a standard pickle or an English pickle. The English cucumber is usually our favorite for salads due to its thin skin and lack of seeds. But you can use a regular cucumber here if you peel and remove the seeds: then both will work! You will need:

How to Make Cucumber Lemonade (Basic Steps)

Making homemade lemonade is easier than you think! The only part that takes time is squeezing the lemons. Here are some notes on the process, or jump to the recipe below for quantities:

  • Squeeze lemons. using a Juicer is the fastest way to juice lemons: it extracts most of the juice and saves your fingers from getting tired from squeezing. The next best choice? A portable juicer.
  • Mix cucumber, sugar and water. Give it a boost in the blender.
  • Strain through a fine sieve! This will remove any sediment that may be floating on the lemonade’s surface.
  • Shuffle the pitcher. Mix cucumber syrup with lemon juice and water in a pitcher. That’s it!

For garnish

Are you serving this pickle lemonade for a party or entertaining guests? It’s nice to add some embellishments to the glass to give it a festive look. We like to do this:

  • cucumber slices: Put a few slices of cucumber in the jar or pitcher; You need to buy an extra pickle for this.
  • lemon slices: Lemon Wedges or Wheels also look great in a glass or pitcher!
  • Colored Straws: It all depends on the presentation! We love adding these striped paper straws to drinkware.

  • 1 ½ cups freshly squeezed lemon juice (Seven at 8th large lemons, plus more for garnish)*
  • 1 cup peeled and seeded cucumber (1 large cucumber, plus more for garnish)
  • 1 cup granulated sugar (or coconut blossom sugar)
  • 6 cups water shared
  • Ice

  1. Squeeze the lemons. Peel the cucumber and scoop out the seeds with a spoon (skip this step if you’re using an English cucumber).
  2. Place the cucumber, sugar and 2 cups warm water in a blender and blend until smooth. Strain the liquid through a fine-mesh strainer into a jug and strain with a spatula (discard the pulp, this will take a few minutes).
  3. In the pitcher with the cucumber mixture, add 4 cups of cold water and the freshly squeezed lemon juice. Add a few handfuls of ice and serve. Garnish with cucumber slices and additional lemon wedges, if you like.
