do you have pickles Here’s a great way to use them: refrigeration pickle juice! This delicious vegetable juice is moisturizing and full of spa flavor. Our recipe was inspired by an accidental pickle glut that resulted in them overstocking our vegetable drawer. The pickle juice hit the spot! Combine with green apple for a flavorful and ultra-refreshing natural juice. Here’s how to prepare this healthy and bright drink!

Benefits of Pickle Juice: Why Drink It?

First of all, why drink this vegetable in juice? Well, any pickle juice benefits you may have heard about are exaggerated. Cucumber juice does not make you slimmer or cure diseases. Similar to celery juice, green juices have inflated health claims. Here’s what we know:

  • When you drink cucumber juice, you get all the good qualities of the vegetable: except for the fiber. It’s even better to eat the whole veg. Visit our pickle recipes for ideas!
  • Cucumber is low in calories but high in nutrients. Drinking the juice will get you all of those vitamins: it’s particularly rich in vitamin K.
  • Pickle juice is a good alternative to sodas or other sugary drinks. Instead of drinking the empty calories and sugar of a soda pop, ingesting this juice is definitely a better choice!

Ingredients for cucumber juice

Cucumber juice is very easy to prepare: with only 2 ingredients! You can make this with plain celery, but we like to add green apple to sweeten the flavor a bit. It’s a great way to reduce food waste and use cucumbers in your vegetable container (exactly the reason we made this recipe in the first place!). Here’s what you need:

  • Cucumber: English cucumber is your best choice, but you can use standard cucumber too! More below.
  • Green apple: Green apple adds a sweet, tangy flavor and even more nutrients.
  • Lemon or Lime (optional): Citrus adds a nice flavor but is entirely optional.

English cucumber vs standard cucumber

This cucumber juice is easier with an English cucumber: because you don’t have to peel it! Alex and I usually buy English pickles because we like the taste so much better. You can definitely use regular cucumbers here: just peel them before using. But most of the nutrients in a cucumber are in the skin, so using an English cucumber if you can find it is an added bonus! Here are the main differences between the English pickle and the standard pickle:

  • english cucumber is long with a very thin skin and the seeds are small. The taste is milder than the standard cucumber and does not need to be peeled or pitted before consumption. Because the thin skin is so fragile, it’s sold in the grocery store with a plastic sleeve.
  • Cut standard cucumbers is shorter, with very thick dark green skin and very large seeds. The thick skin and seeds can be bitter, so they are often removed during cooking. We recommend removing it for this pickle juice recipe.

Variations: additional flavors!

This easy pickle juice recipe tastes great on its own, but it’s always fun to make it fancier! We like to add things like fresh fruit or ginger to our juice recipes to make them taste more interesting. Here are some ideas for this pickle juice:

  • Green Juice: Add greens! Go green juice.
  • Cucumber with Ginger: Add ½ teaspoon of peeled and grated ginger.
  • Pineapple Cucumber: Add 1 cup chopped fresh or canned pineapple.
  • pear pickle: Use 1 unpeeled pear in place of the apple.
  • Cucumber Celery: Add a few chopped celery ribs.

How to make cucumber juice (in a blender or juicer)

Ready to make pickle juice? You don’t need a juicer: but you can use one if you have one! Simply run all of the ingredients in the recipe below through your juicer. How to make pickle juice in a blender:

  • Blend all ingredients on high power until pureed and smooth. It will look like a thick smoothie.
  • blunt! This is the important part. Strain the juice through a fine mesh strainer or a nut milk bag. You can also use a cheesecloth and squeeze it to strain out the juice. Discard this pulp or see some uses below.
  • Cold! Serve the juice on ice or even better: put it in the fridge for a few hours before enjoying.

  • 1 large English cucumber (or 1 at 1/2 standard cucumbers)*
  • 1 green apple
  • 1 cup the water
  • 1 pinch of salt
  • ½ tbsp Lemon or lime juice (optional)

  1. If using a regular cucumber, peel it (no peeling required for an English cucumber!). Roughly chop the cucumber. Chop the apple, keeping the skin.
  2. Place the cucumber, apple, water and salt in a blender. Blend on high power until puree and juice form.
  3. Strain the juice through a fine mesh strainer or nut milk bag to strain out the pulp. Discard the pulp (or use: see ideas above). Stir in fresh lemon or lime juice (add more if needed). Drink immediately over ice or refrigerate before drinking.
