What’s better than this classic combination of cucumber and dill? I grew up eating these cucumber and dill sandwiches: my mom used to make them for picnics and parties. Turns out they’re a bit of a retro snack served on these cocktail rye buns. But they go back even further: cucumber sandwiches come from Britain and were served as tea sandwiches! At A Couple Cooks we like very simple recipes. (In fact, we’ve written a whole book about easy recipes!) And easy ideas are even better when they seem fancy, like pairing cucumber and fresh dill. These cucumber sandwiches are one of our picnic favorites because they’re summery and light. They’re also great for entertaining: a fancy brunch, baby shower, garden party and more.

To make these cucumber sandwiches, follow these steps:

  • Prepare the crostini: Thinly slice a baguette and bake at 350°F for about 10 minutes until crisp. You can also use cocktail rye breads, those mini rye breads you find at the grocery store.
  • Spread on cream cheese: For the cream cheese, we chop some fresh dill and add it to the cream cheese along with salt and pepper. Although we usually use cream cheese as a base, you can use any soft cheese spread, even goat cheese.
  • Add cucumber slices: Then just throw on some cucumber slices and another sprig of dill and you have delicious cucumber and dill sandwiches!

Which cucumber to use?

A note on cucumber varieties! We like to use an English cucumber here instead of a standard one. They have a milder flavor and no large seeds. Also, the skin is easily edible, while the skin of standard cucumbers can sometimes taste bitter.

  • 24 Slices of baguette or rye cocktail bread
  • 1/2 english cucumber
  • 6 ounces cream cheese
  • 3 tablespoons chopped fresh dill, plus more for garnish
  • Kosher salt
  • Freshly ground black pepper

  1. Preheat oven to 350°F. Cut the bread into thin slices and place the slices on a baking sheet. Grill for about 10 minutes until crispy.
  2. Thinly slice the cucumber.
  3. Mix cream cheese with chopped dill. Season to taste with kosher salt and black pepper.
  4. Spread each slice of bread with cream cheese. Garnish with a sliced ​​cucumber, some kosher salt and a sprig of fresh dill.
