This concept is our favorite for entertaining: It’s deliciously flavorful and filling, with plenty of protein to keep your tummy full all morning. Even better: it’s so easy to conjure! No need to worry about a quiche base: just whip up the filling and pop it in the oven. The Crustless Spanish Quiche is a little miracle: even our 4 year old who is afraid of spinach loves it! Here’s how to make a crustless quiche recipe and customize the filling for your family.

A crustless quiche is a savory egg custard baked without the traditional pastry case. Without a crust, a quiche without a crust looks like an Italian frittata. The difference? Quiche traditionally has more dairy than a frittata. Here’s what you need for the basic recipe for it Crustless Spanish Quiche. The great thing about this recipe is that it even wins against anti-spinach (like our son!). But you can customize it to have the veggies of your choice. Here’s what you need:

  • eggs
  • oregano, garlic powder, salt and pepper

  • cottage cheese: Whole milk is often used in a quiche recipe, but cottage cheese works magic here! It brings a strong, savory taste and a velvety texture

  • Roasted peppers in a jar

A few notes on spinach

This recipe is so easy, all you have to do is combine the ingredients and bake for 25 minutes until puffy and golden! How it works? Here are some notes on some of the ingredients and how they work the magic:

  • Use frozen spinach, not fresh. Why? Frozen spinach has already been blanched and is therefore significantly reduced in volume compared to fresh spinach. It also has a chewy, desirable texture: it’s hard to describe, but trust us! Think spinach and artichoke dip.
  • Defrost the spinach under lukewarm water. Simply put in a colander and heat under running water! However, we’ve found that some brands of spinach are frozen in blocks: in which case you may need to use a microwave to defrost.
  • Important: Squeeze out as much water as possible! This avoids a runny, crustless quiche. While the spinach is in the colander, squeeze it with your hands. The spinach should look like dry crumbs when you’re done.

Variations on Mixtures

You can turn this crustless quiche recipe into hundreds of different flavors based on your preferences! If you like, you can add other flavors like a handful of chopped ham or crumbled bacon. Or you can omit the spinach and use other cooked vegetables. Add ½ cup additional blends to the recipe below, or remove the spinach entirely and substitute about 1 to 1 ½ cups of the blends. Here are some ideas (make sure they are finely chopped):

Note that you want the vegetables to be cooked through as you sauté them so they don’t give off too much moisture as they cook. They need to be finely chopped for good distribution.

Last thing about this spinach-free quiche: Want to make personal-sized versions? You can! Make a mini no-crust spinach quiche with a muffin tin! Here’s what to do:

  • Spray a standard sized muffin tin with cooking spray.
  • Follow recipe below, but pour egg mixture evenly into 12 muffin cups.
  • Garnish with additional red pepper.
  • Bake 22 to 24 minutes, until set in the center and golden on the edges. Allow to cool, then run a butter knife around the edges and remove from the muffin tin.

This No Spinach Crust Quiche is an easy and perfect brunch recipe! The savory taste will impress everyone.


  • ten at 12 ounces frozen spinach*
  • 6 Big Eggs
  • ½ teaspoon dried oregano
  • ½ teaspoon kosher salt
  • ¼ teaspoon garlic powder
  • 1 cup cottage cheese
  • ¼ cup grated parmesan cheese
  • ¼ cup chopped roasted red peppers (in a jar) plus more for garnish
  • Freshly ground black pepper

  1. Preheat oven to 375°F. Grease a 9 inch round cake pan.
  2. Place the spinach in a colander and run lukewarm water over it until thawed, about 1 minute (some brands take a little more effort to defrost: you can also use a microwave if needed). Then use your hands to squeeze out as much liquid as possible.
  3. In a large bowl, whisk the eggs. Then stir in the oregano, salt, garlic powder, cottage cheese, grated parmesan, spinach, and roasted red peppers. Add a few freshly ground black peppercorns, if you like.
  4. Pour the egg mixture into the prepared cake pan. Sprinkle the top with a few tablespoons additional chopped roasted red peppers.
  5. Bake the quiche for 25 to 30 minutes, until set in the center and golden brown around the edges. Let stand at least 15 minutes before serving. (Storage info: It saves a lot! Store in the fridge for up to 5 days: eat it cold, at room temperature, or reheat. Try it in a sandwich!)
