Just a few days and I’m alone on a plane to Laos for a very long (and lonely) 30 hour journey. Eating while traveling is at the heart of my thinking, and I thought of snacks that can fill you up. Luckily, a perfect idea is right in front of me: this crispy quinoa granola we made this weekend.

This recipe was born from Alex’s idea for a crunchy topping for our Curried Acorn Squash Soup. The cool part is that this recipe uses uncooked quinoa instead of oats! We were a little wary of eating quinoa raw, but since it was a seed and not a grain, it turned out to be perfect — deliciously crunchy, sweet, and packed with nutritional value. It was quite filling, more so than a traditional granola, and a great high-protein (and gluten-free) treat.

This recipe is easy to make and a great way to start exploring healthy snacks. Don’t eat the whole jar at once! Throw it over yogurt, eat it with milk, or simply pat dry for a quick on-the-go snack.

This Crunchy Quinoa Granola is a grain-free granola that’s deliciously crunchy, sweet and packed with nutrients.
- ½ cup almonds
- ¾ cup raw quinoa
- ½ cup Pumpkin seeds (pepitas)
- ½ teaspoon kosher salt
- 2 tablespoons olive oil
- ¼ cup Honey
- ½ cup golden raisins (or other dried fruit)
- *Note: This recipe can easily be doubled to fit on a baking sheet.
- Preheat oven to 350°F.
- chop almonds In a medium bowl, combine the chopped almonds, dry quinoa, pumpkin seeds, and kosher salt. Stir in olive oil and honey to mix well. Spread on a baking sheet.
- Bake for 20 minutes, stirring several times. Remove from the oven and add the golden raisins (or other dried fruit) and let cool for 15 minutes. Break large chunks into small pieces and store in an airtight container.
