The description

The secret of this creamy vegan tomato soup is roasted tomatoes and cashews. It’s quick and easy, and the star toast makes it a hit with the kids.



  1. Chop 1 onion. Finely chop 4 cloves of garlic. Chop ½ cup basil leaves.
  2. In a medium saucepan, heat 2 tablespoons olive oil over medium-high heat. Add the onion and sauté for 5 minutes until translucent. Add garlic and red pepper flakes; Fry for 1 minute until fragrant. Add the white wine vinegar and cook until evaporated.
  3. Add the basil, cashews, canned tomatoes and their liquid, broth, kosher salt, and black pepper. Bring to the boil, then reduce the heat and simmer for 20 minutes. When finished, use an immersion blender to puree the soup for a few minutes (or puree in a blender) until creamy and the cashews are fully incorporated.
  4. Meanwhile, toast the bread slices and cut out stars with small star-shaped cutters. Chop the chives.
  5. Serve the soup hot with star toast and chopped chives.
