How to make red potato salad

There are a few secrets to making the classic salad that tastes like a million bucks, Dill Pickle Mustard! How to make this Red Skin Potato Salad:

  1. Potatoes don’t need to be peeled! You can leave the skin on your potatoes, which makes this recipe faster to cook! It also retains all of those added nutrients (fiber, vitamin C, vitamin B, and other minerals and antioxidants, according to this source).

This delicious red potato salad is a twist on the classic creamy American potato salad, mustard with crunchy dill pickles!


  • 2 1/2 Pound Yukon Gold or Red Potatoes, about 6 medium wide
  • 3 tablespoons white wine vinegar
  • 1 teaspoon kosher salt, shared
  • 3 large sticks of celery (approx 1 ¼ cup cut)
  • 5 spring onions (approx. ½ cup cut)
  • ½ cup chopped dill pickles (approx 2 big spears)
  • ¾ cup Mayonnaise (vegan mayo if desired)
  • 1½ tablespoons yellow mustard
  • Black pepper

  1. Dice the potatoes, leave the skin on. Place them in a large saucepan filled with cold water. Bring to a boil and cook until tender when pierced with a fork, 10 minutes. Drain the potatoes and rinse under cold water. If using Yukon Gold potatoes, use your fingers to remove the skin (you can leave the skin on for red-skinned potatoes).
  2. Place the potatoes in a bowl and drizzle with white wine vinegar and ½ teaspoon Kosher salt. Mix gently and leave for 10 minutes.
  3. Halve the celery sticks lengthways, then slice thinly. Cut the spring onions into thin slices. Chop the dill pickles.
  4. In the bowl with the potatoes, combine the mayonnaise, mustard, celery, scallions, pickles, ½ teaspoon kosher salt, and freshly ground pepper. Serve immediately or refrigerate until ready to serve.
