The Coconut Mojito is a tropical take on the mojito, a classic cocktail invented in Havana, Cuba. Some believe the drink’s origins date back hundreds of years. The modern version emerged in America in the 1930s when Ernest Hemingway helped popularize it.

The coconut rotation on this drink adds two different coconut products to the drink. Coconut cream replaces simple syrup to add sweetness and creaminess, and coconut rum adds a strong coconut flavor. Here’s what you need:

  • Fresh mint
  • lime juice
  • coconut cream (no coconut cream; see below!)
  • white rum
  • coconut rum
  • Carbonated water

Why look for coconut cream?

  • coconut cream is a sweet syrup used in cocktails and often sold in convenient squeeze bottles for easy adding to drinks. Coconut Cream is easy to find online or at your local liquor store. A popular brand is Coco Real.
  • coconut cream is unsweetened and is usually sold canned. It’s thick with a strong coconut flavor. This is not desirable for cocktails as it does not give the drink the required sweetness.

In this coconut mojito recipe you use a mixture of white rum and coconut rum. Why do you need coconut rum? It gives an intense coconut flavor. You can skip it and just use the coconut cream if you’re having trouble, but we recommend using it. Here’s what you should know about coconut rum:

  • Most coconut rums are considered coconut flavored liqueurs. It’s high in added sugar and low in alcohol: Malibu Coconut Rum has just 21% ABV. In contrast, rum has no sugar and 40% vol. So it’s more of a liquor (here the technical definitions).
  • Malibu Rum Coconut is the most popular brand of coconut rum. It was created in 1982 to allow bartenders to simplify the process of making the piña colada. You can find other types of coconut rums like Bacardi, Capitan Morgan etc.

Crush the mint, then shake

Once you have your coconut products, the only other cocktail technique in this coconut mojito is to mix in the mint. When grinding, herbs or fruits are gently crushed to release their juice. How to make this drink:

  • Use a cocktail pestle. It’s the right tool for the job! Here’s a great cocktail muddler, or you can use an unfinished wooden spoon.
  • Crush the mint first. Mash the herb gently to extract all the oils. You can do this right in the shaker.
  • Drink ingredients, add ice and shake! Then filter the drink. Don’t have a cocktail shaker? You can use a glass jar with a lid (drill holes in the lid for straining).

  • 6 Mint leaves, plus more for garnish
  • 1 ounce* White Rum
  • 1 ounce coconut rum
  • 1 ounce lime juice
  • 1 ounce coconut cream (not coconut cream)
  • 2 ounces Carbonated water

  1. Mash the mint leaves in a shaker. Pour white rum, coconut rum, lime juice and coconut cream into shaker and fill shaker with ice. Shake until cool.
  2. Put ice in a glass and strain the drink. Fill the glass with sparkling water. Garnish with more mint leaves.
