- Old-fashioned oatmeal: Do not use oatmeal or instant oatmeal! This recipe is for the old-fashioned variety. We have a great variation on steel oatmeal below.
- Milk: Use any variety you like, even dairy-free.
- Pumpkin puree: This recipe uses ½ cup pumpkin, so it’s perfect for using up leftover cans. Don’t use pumpkin pie filling as it’s already flavored.
- Butter: This brings a savory note; Use coconut oil if you like.
- Brown sugar: We usually use maple syrup in our oatmeal recipes, but here the sugar was better for the overall flavor.

- 1 cup Milk of your choice (oat milk or almond milk for vegans)
- ¾ cup the water
- ½ cup pumpkin puree
- 1 tbsp salted butter (coconut oil for vegans)
- 2 cups Old-fashioned oatmeal (don’t use instant oatmeal or rolled oats)
- 2 tablespoons Brown sugar
- 1 teaspoon Cinammon
- 1 pinch of nutmeg
- ¼ teaspoon kosher salt
- maple syrup for serving
- Combine milk, water, and pumpkin puree in a small bowl and set aside.
- Melt the butter in a saucepan over medium heat. Add oats and toast, stirring frequently, until fragrant, about 2-3 minutes.
- Add brown sugar, cinnamon, nutmeg and salt. Reduce the heat to low and carefully pour in the liquids, stirring. Cover and cook over low heat without stirring for 5 minutes until tender. Remove from fire. Serve immediately for a thicker texture or stir in an additional ½ cup of milk for a creamier body. The texture is intentionally fluffy, not slippery or squishy.
