These oats are perfect for using up that extra bit in the box after making pumpkin bread. Perfectly spiced with cinnamon and just the right amount of sweetness: the perfect fall breakfast!

There is one ingredient that is obviously missing from this list. Pumpkin taste! Yes, we tested a few pumpkin pie spice recipes and it absolutely blew away the flavors. So all you need for this one is cinnamon and a pinch of nutmeg! This delicious snuggle knot is a variation of our Perfect Oatmeal. What you need for the pumpkin oatmeal:

  • Old-fashioned oatmeal: Do not use oatmeal or instant oatmeal! This recipe is for the old-fashioned variety. We have a great variation on steel oatmeal below.
  • Milk: Use any variety you like, even dairy-free.
  • Pumpkin puree: This recipe uses ½ cup pumpkin, so it’s perfect for using up leftover cans. Don’t use pumpkin pie filling as it’s already flavored.
  • Butter: This brings a savory note; Use coconut oil if you like.
  • Brown sugar: We usually use maple syrup in our oatmeal recipes, but here the sugar was better for the overall flavor.
  • Cinnamon and Nutmeg: No pumpkin spice needed!

  • Roast the rolled oats in the butter for a few minutes. It brings out a nice nutty flavor and makes your kitchen smell amazing.
  • Add the remaining ingredients and cook without stirring for 5 minutes. Because you don’t stir to break up the oats, the oatmeal has a nice chewy texture.

What are the best toppings for pumpkin oatmeal? Since there is a strong fall mood, some trimmings work better than others. Don’t throw fresh raspberries and blueberries on it! Here’s what we suggest:

  • maple syrup! Secure. A little touch of sweetness is a must.
  • pecans or chopped walnuts. Use toasted pecans or toasted walnuts to bring out the nutty flavor even more (it makes a big difference). Or go fancy and use maple glazed pecans or glazed walnuts.
  • sunflower seeds. Pumpkin seeds are perfect! Salty roasts have the best flavor.
  • nut butter. Almond butter, pecan butter, or cashew butter are the best nut butters for pumpkin! We find that peanut butter can overpower the taste.
  • Yogurt mixed with maple syrup. Greek yogurt with some maple makes a nice contrast.
  • Milk. A standard choice, but there’s something so cozy about it!

  • 1 cup Milk of your choice (oat milk or almond milk for vegans)
  • ¾ cup the water
  • ½ cup pumpkin puree
  • 1 tbsp salted butter (coconut oil for vegans)
  • 2 cups Old-fashioned oatmeal (don’t use instant oatmeal or rolled oats)
  • 2 tablespoons Brown sugar
  • 1 teaspoon Cinammon
  • 1 pinch of nutmeg
  • ¼ teaspoon kosher salt
  • maple syrup for serving

  1. Combine milk, water, and pumpkin puree in a small bowl and set aside.
  2. Melt the butter in a saucepan over medium heat. Add oats and toast, stirring frequently, until fragrant, about 2-3 minutes.
  3. Add brown sugar, cinnamon, nutmeg and salt. Reduce the heat to low and carefully pour in the liquids, stirring. Cover and cook over low heat without stirring for 5 minutes until tender. Remove from fire. Serve immediately for a thicker texture or stir in an additional ½ cup of milk for a creamier body. The texture is intentionally fluffy, not slippery or squishy. Top with desired toppings (a spritz of maple syrup is essential).
