Wondering how to make coffee with a Chemex coffee maker? All you need is the Chemex ratio that makes a perfect cup of coffee every time. Here it is:

Chemex report:
1 gram of coffee for 15 grams of water

This Chemex ratio doesn’t mean much until you understand how many grams of coffee make 1 cup of coffee! Here are some other things to keep in mind:

  • 1 cup Chemex coffee: Use 20 grams of coffee beans (about 3 tablespoons) and 300 grams of water. (20×15=300)
  • 2 cups Chemex coffee: Use 34 grams of coffee beans and 510 grams of water. (34 x 15 = 510)
  • 3 to 4 cups of Chemex coffee (max.): The maximum amount of coffee you can use in a standard 6 cup Chemex is 50 grams which makes around 3-4 cups depending on the size of your cups. Use 50 grams of coffee and 750 grams of water. (50×15=750)

Remember that you can vary between 15 and 16 grams of water per gram of coffee, depending on the taste of the coffee. Use what suits your personal taste! Alex and I found our perfect Chemex recipe in the ratio of 34 grams of coffee and 520 grams of water – which you will see in the recipe below.

Brewing coffee pourover and need a Chemex recipe? Here’s the Chemex review: This simple formula delivers the perfect cup of coffee every time.


  • 34 grams light or medium roast coffee beans*
  • 520 grams filtered water (taste is better with filtered water)

  1. Heat a pan of filtered water to 200 to 205F. We use a kettle that shows us the exact temperature. You can also use a teapot on the stove – just heat it to a boil and then let the water cool for a few minutes.
  2. Use a food scale to weigh out 34 grams of coffee, then grind to a medium-coarse grind (about the size of kosher or sea salt). We use an electric grinder to achieve an even grind.
  3. When the water is heated, insert the filter into your Chemex (see video below for detailed instructions). Just pour a little water to wet the filter and then pour the water into the sink. Pour the ground coffee into the Chemex and shake to even out.
  4. Place the Chemex on the food scale and tare it so the scale reads 0. Slowly pour in 70 grams of water in a circular motion. Then stop and wait 1 minute: this will allow the coffee to thrive (you may have to tap your scale once to keep it from running out!).
  5. Then slowly add the remaining 520 grams of water in two portions, pouring very slowly in concentric circles, pour directly over the coffee and without touching the coffee filter. Fill to about ½ inch from the top (it will likely be about 400 grams of water), wait for the water level to drop slightly, then fill with the remaining water to fill up to 520 grams.
  6. After a few minutes, all of the water will seep through the coffee grounds into the pot below. Remove the filter and throw it away (we compost ours). Enjoy!

Remarks

*In our large Chemex you can brew a maximum of 50 grams of coffee and 800 grams of water at a time, which corresponds to about 3-4 cups of coffee. To increase or decrease, simply use our magic ratio: 15-16 grams of water for 1 gram of coffee.
