When people ask us how to eat more veggies or start eating plant-based recipes, this is one of the recipes we share. Curries are delicious because of the incredible amount of flavor in the curry powder spice blends. They’re also a great way to eat a wide variety of nutritious vegetables without even realizing it. This Coconut Cauliflower Curry is filled with all sorts of delicious veggies: cauliflower, tomato, spinach, sweet potato and chickpeas. Covered in a curry sauce, the vegetables taste really delicious!

For this easy cauliflower and tomato curry recipe you will need these ingredients:

The basic method: chop all the vegetables. Fry the onion, sweet potato and cauliflower, then add the spices, tomatoes and coconut milk. Simmer for 10 minutes. What is the best way to serve this Indian cauliflower curry? Here are a few ideas:

We recommend reheating it in 1 minute increments, giving it a good stir each time the timer goes off (this will help heat it evenly). If you don’t have a microwave, you can also reheat it in a saucepan. Heat with the lid closed and set the heat to medium-low. If the curry seems a bit thick, feel free to add a tablespoon or two of water to loosen it up.

For this cauliflower curry we used a fancy curry powder that we got as a gift from a dear friend. This blend was an amazing blend of flavorful spices and I don’t think I’ve tasted anything more delicious! After cooking with this one, we realized that It depends on the quality of the curry powder. Find the best possible quality for this recipe. Experiment with different brands available at your grocery store until you find one you like.

What is garam masala?

Garam Masala is a more common spice blend used by Indian cooks. Garam masala is generally stronger than curry powder and can taste sweeter. This cauliflower curry recipe calls for both curry powder and garam masala. You should be able to find both at your local grocery store.

  • 1 yellow onion
  • 1 Sweet Potato Pound (4 cups chopped)
  • 1 cauliflower head (5 cups chopped)
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt, shared
  • 2 tablespoons curry powder*
  • 1 tbsp garam masala
  • 1 teaspoon cumin
  • ¼ teaspoon cayenne
  • 28-an ounce of diced tomatoes, if possible San Marzano
  • 15-oz can of whole coconut milk*
  • 15-oz can of chickpeas (or 1 ½ cups cooked)
  • 4 cups spinach leaves
  • cilantro, for garnish
  • Brown or white rice for serving

  1. Prepare the rice according to How to Cook White Rice, How to Cook Brown Rice, or Instant Rice.
  2. Chop the onion. Cut the sweet potato into small pieces (do not peel). Cut the cauliflower into florets.
  3. Heat 2 tablespoons olive oil in a large non-stick skillet over medium-high heat. Add the onion and sauté for 2 minutes, then add the sweet potato and sauté for 3 minutes. Add the cauliflower and ½ tsp kosher salt and sauté for another 5 minutes. Stir in 2 tbsp curry powder, 1 tbsp garam masala, 1 tsp cumin and ¼ tsp cayenne pepper. Add Muir Glen tomatoes and coconut milk. Bring to a boil, then cover, reduce heat and simmer until cauliflower and sweet potato are tender, about 10 minutes.
  4. Drain and rinse the chickpeas. When the veggies are soft, add the chickpeas and 4 cups of spinach and stir until spinach has wilted, 2 minutes. Add another ½ teaspoon of kosher salt to taste, adding additional salt if needed.
  5. Garnish with chopped coriander and serve with brown rice.

Remarks

*Using quality curry powder is key to creating a complex flavor in this curry. Using full-fat coconut milk is also recommended over light coconut milk as it imparts a satisfying richness.
