What’s in a tuna melt?

A tuna fudge is a sandwich made with tuna salad and melted cheese, served hot. It’s essentially a tuna salad Prepared like a sandwich grilled cheese on the stove. Another popular way to melt tuna is an open sandwich, where the tuna salad is spread on toasted bread and a piece of grilled cheese on top. Both methods work: but because the traditional sandwich method is the most classic, we’ll share it here. Here’s what’s in this tuna fondue recipe:

  • Canned Tuna: Use either water or oil (we prefer water).
  • Red Onion and Dill Pickles: A good tuna salad must have pickles to offer a spicy, sweet, sweet element.
  • Tarragon or dried dill: Just a hint of herbs adds incredible complexity! Tarragon is no ordinary herb, but it’s a game changer here. If you don’t have one, use dried dill.
  • Parsley (optional): Just add a little color and freshness, but that’s optional.
  • Mayonnaise: You don’t need much: just enough to form a creamy spread.
  • Dijon mustard: Dijon gives it the taste of a fine tuna salad.
  • Artisan Bread: A hearty artisanal sandwich bread makes a good canvas for this sandwich.
  • Tomato (optional): The tomato is classic in a tuna glaze, and we think it contrasts just right with the savory filling and gooey cheese.
  • Cheddar cheese: You can also use other types of processed cheese if you prefer: White Cheddar, Gouda, Monterey Jack, Havarti, Provolone, or Munster also work well.

How to melt a tuna

Ready for the secrets to the world’s most perfect tuna melt? Here’s how to make tuna fudge that will blow your mind:

  • Take a good crusty bread. Cut the pieces to medium thickness so they will hold up on the grill but not so thick that the sandwich won’t cook. We used store-bought white bread.
  • Mix in the tuna salad. Mix this delicious filling (below) with mayonnaise, Dijon and pickles.
  • fine slice the tomato. This is important because too thick can make the sandwich too runny. It’s optional if it’s not tomato season or you don’t have any on hand.
  • Add sliced cheese. Although our best gourmet grilled cheese uses shredded cheese, it can get a little messy, so we like sliced cheese for our tuna fudge.
  • Grill (carefully). Toss it on a griddle and bake until golden and crispy on the outside! This makes a complete sandwich, so be careful when turning it over.
