For the vegetable fajitas

  • 3 Peppers (red, yellow and green)
  • 1 medium red onion
  • 2 Portobello mushrooms
  • 3 Garlic cloves
  • 3 tablespoons olive oil
  • 2 teaspoons Cumin*
  • 1 teaspoon every Chili powder, garlic powder and smoked paprika*
  • 1½ teaspoons kosher salt

For the shrimp fajitas

  • 1 1/2 Pound medium shrimp, deveined (tail or peeled)
  • ¾ teaspoon every kosher salt, garlic powder, onion powder, cumin and smoked paprika
  • 2 tablespoons butter (or olive oil)
  • 3 lime wedges
  • 8th at 12 small tortillas (flour or glueTen free)
  • For the toppings: sour cream, pico de gallo, fresh cilantro, guacamole (optional), grated cheese (optional)

  1. Thaw shrimp if frozen.
  2. Prepare the vegetables: Thinly slice the peppers and finely chop the onion. Remove the stems and slice the portobello mushrooms. Crush the garlic cloves. Place all the vegetables and garlic in a bowl and toss with 2 tablespoons olive oil, salt, cumin, chili powder, garlic powder, smoked paprika powder, and kosher salt.
  3. In your largest skillet**, heat the remaining tablespoon of olive oil over medium-high heat. Add the vegetables and cook until tender and lightly charred, about 13 to 15 minutes, stirring occasionally. Add additional salt to taste (we usually add a few pinches more). Remove and discard the garlic cloves. Place the vegetables in a bowl while you cook the shrimp.
  4. Cook shrimp: Dry the shrimp. In a medium bowl, toss the shrimp with the salt, smoked paprika powder, garlic powder, onion powder, and cumin. In the same pan, heat the butter over medium heat. Add the shrimp and cook, turning with tongs, until opaque and cooked through, 1 to 2 minutes on each side. Drizzle with the juice of the lime wedges.
  5. Surcharge: Warm tortillas. Garnish with toppings and serve.

Remarks

*If you have homemade or store-bought fajita seasoning, you can substitute the seasoning. For veggies, use 2 tbsp fajita seasoning and reduce kosher salt to 1 tsp. For the shrimp, use 1 tbsp fajita seasoning and add ¼ tsp kosher salt.
