Here it is ultimate Burrata Pizza Recipe: a traditional margherita pizza topped with gooey burrata cheese. It tastes like the best pizza you’ve ever eaten: but at least 10 times better. Alex and I have been perfecting the art of artisanal Neapolitan pizza for over a decade, and this one is a new favorite. Here are some tips for making the best burrata pizza!

What exactly is burrata?

Burrata is a fresh Italian mozzarella with a surprise inside: the middle is filled with cream! The creamy interior also contains vsheese scraps, called striciatelle. Cut into a ball and spread on the creamy cheese. This cheese comes from southern Italy; Now it is served across the country and around the world. Alex and I first tried it on our honeymoon in Italy and have been huge fans ever since.

Tips for making burrata pizza

Here’s the thing. Burrata has a lot of liquid inside. If you put burrata cheese on pizza, you run the risk of making it a watery mess. There are several methods of putting burrata on pizza: some spoon it directly onto the bottom. Others place the whole burrata ball on top of the pizza after baking and the cutter spreads the cheese all over the pizza. Here’s the trick to making this burrata pizza (which we think is pretty much perfect):

  • First prepare the pizza with grated mozzarella cheese. This will brown the crust and melt a base layer of cheese. If you put the burrata at the beginning, it will be too runny at the end of the cooking time.
  • Add the shredded burrata pieces in the last 3 minutes. Yes, you will actually take the pizza out of the oven, add the burrata pieces, and then bake it again. You’ll peel it off once the burrata melts into an evenly gooey layer!

The best way to make this burrata pizza taste like Italy: make our easy pizza sauce and pizza dough! This pizza sauce is one of our favorite recipes on this site. Every time we do it, it amazes us. Here are the secrets of this sauce:

  • Use fire roasted tomatoes. These tomatoes are roasted, so their flavor is milder and more developed straight from the can. If you can’t find them, use the best quality tomatoes you can find.
  • Put them in the blender with the garlic, olive oil and spices. All you have to do is quickly toss the ingredients in the blender and you’re done. Try it and you will melt.

  1. Prepare pizza dough: Follow the Best Pizza Dough or Thin Crust Pizza Dough recipe to prepare the dough. (It takes about 15 minutes and 45 minutes to rest.)
  2. Place a pizza stone in the oven and preheat to 500°F. OR preheat your pizza oven (this is the pizza oven we use).
  3. Prepare pizza sauce: Prepare the easy pizza sauce recipe. (You will use about ⅓ cup for the pizza; save the remaining sauce and refrigerate for up to 1 week.)
  4. Bake pizza: When the oven is done, dust a pizza peel with corn or semolina flour. (If you don’t have a pizza peel, you can use a rimmed baking sheet or the back of a rimmed baking sheet. But a pizza peel is worth the investment!) Roll out the dough in a circle; For instructions, see How to stretch pizza dough. Then carefully place the dough on the pizza peel.
  5. Spread a thin layer of pizza sauce, about ¼ to ⅓ cup, over the dough. Add grated mozzarella cheese. Garnish with a thin layer of grated fresh Parmesan cheese and a few pinches of kosher salt.
  6. Use the pizza peel to carefully transfer the pizza onto the preheated pizza stone. Bake pizza until cheese and crust are golden brown, about 3 minutes. While the pizza is baking, break the burrata into small pieces and place in a bowl.
  7. Add the burrata cheese: Use the pizza shovel to take the pizza out of the oven. Spread the burrata pieces quickly and evenly over the dough. Place back in the oven and cook for 3 to 5 minutes until cheese is melted.
  8. Allow the pizza to cool for a minute before adding the basil (whole, lightly torn, or thinly sliced ​​leaves). Cut into pieces and serve immediately.
