Do you have a lot of nice berries? Let’s do it Blueberry Pancakes! There’s nothing quite like the smell of a golden roast on a weekend morning (right?). This is how your morning dreams come true. Classic and easy, this blueberry pancake recipe uses ingredients you probably already have on hand. It makes light and fluffy pancakes, with just the classic good taste punctuated with tangy bursts of purple berries. In a word, you are perfection.

This blueberry pancake recipe is based on our classic pancake recipe, which we developed after lots of testing and research. (Let’s say it’s been a delicious few weeks!) What did we find? Here is the combination of ingredients that make the best blueberry pancakes:

  • all purpose flour
  • granulated sugar
  • baking powder and salt
  • egg
  • milk
  • Unsalted butter or neutral oil
  • vanilla extract
  • lemon juice or vinegar: Adding an acidic ingredient helps create fluffy pancakes. If you don’t have fresh lemon juice handy, use apple cider vinegar or white vinegar: you can do that too!
  • Fresh blueberries (or substitute frozen!)

It is best to add the berries

If you should know one thing about blueberry pancakes, it’s this: when to add the berries to the batter. How do you get the most even distribution of blueberries? Place the berries directly onto the batter as it cooks on the griddle. Why? Adding the berries to the batter bowl will result in lumpy pancakes and an uneven distribution of the berries. If you put them right on top, you’ll even get round pancakes with just the right amount of fruit in each one.

Just one thing to note: If you add the berries while the cakes are on the grill, the “top” side of the pancake won’t really show that many berries visually. And that’s it! You can see them when you cut down the middle.

Tips for cooking blueberry pancakes

Once you get the berry method sorted out, there’s not much to cook blueberry pancakes! They’re similar to any standard pancake recipe you’ve made. Here are some best practices to make them golden evenly:

  • Use a large griddle: non-stick coating helps. Some skillets are stained with their heater (we had a cast iron skillet that cooked each pancake a different color!). The non-stick coating is useful and you don’t have to grease it.
  • Experiment to find the right heat level. Medium to low heat is ideal, but each stove is different. The pan should take a few minutes to heat up.
  • About ¼ cup batter per pancake. This usually results in a medium-sized pancake.
  • Don’t worry if the first pancake doesn’t work out! Use it as a test to improve your pancake skills and adjust the heat accordingly.

  • 1 cup all purpose flour
  • 2 tablespoons Sugar
  • 2 teaspoons baking powder
  • ½ teaspoon kosher salt
  • 1 big egg
  • ¾ cup + 2 tablespoons milk
  • ¼ cup melted unsalted butter or neutral oil
  • ½ teaspoon Vanilla
  • ½ teaspoon lemon juice or vinegar*
  • 1 cup blueberries
  • Optional: blueberry sauce for serving

  1. In a medium-sized bowl, mix together the flour, sugar, baking powder, and salt.
    In another bowl, beat the egg, then stir in the milk, melted butter (or oil), vanilla extract, and lemon juice (or vinegar).
  2. Stir the wet ingredients into the dry ingredients until a smooth batter forms. (It will thicken after left for 1-2 minutes.)
  3. Lightly butter a skillet or griddle and wipe off excess fat with a paper towel. Heat pan over medium heat. Pour the batter into small circles (about ¼ cup), then place a small handful of blueberries on top of each pancake. Bake pancakes until bubbles burst on top and bottom is golden brown. Then turn them over and cook until cooked through.
  4. Place the cooked pancakes under an inverted bowl to keep them warm. Repeat with the rest of the dough, adjusting the heat as needed to maintain an even temperature. Serve immediately with maple syrup or blueberry sauce.

Remarks

*Adding an acidic ingredient helps create fluffy pancakes. If you don’t have fresh lemon juice on hand, use apple cider vinegar or white vinegar.
