This Chocolate Covered Strawberry Recipe is so easy and the best part, you don’t have to temper the chocolate. Chocolate tempering is a technique used to ensure a glossy exterior and crisp crunch: this is ideal for sweets like chocolate rind. But you can skip it with dipped strawberries and just melt the chocolate in the microwave! Here are the basic steps (or jump to the recipe below):

  1. Wash and dry strawberries: The berries should be as dry as possible so the chocolate will stick.
  2. Melt chocolate in the microwave: Place the chocolate chips in a dry glass measuring cup or small glass cup or bowl. Microwave on high for 30 seconds, then stir. Cook in two more 30-second bursts, stirring after each one. At this point it should be mostly melted with a few pieces: keep stirring until all the chocolate bits are gone and the chocolate is perfectly smooth.
  3. Dipping strawberries and adding toppings: Line a baking sheet with parchment paper. Holding the green part of a strawberry, dip it in the chocolate, then flip it over to allow the excess to drip off. Place strawberries on the baking sheet and immediately sprinkle with toppings. Repeat for all bays.
  4. Refrigerate: Chill the strawberry tray for 30 minutes.

What is the best chocolate for chocolate covered strawberries? Dark chocolate, either chocolate chips, caramel wafers, fritters, or a candy bar. Dark chocolate has just the right amount of sweetness to match the acidity of the berries: it’s preferred over milk or dark chocolate.

If possible, use high-quality branded chocolate chips such as Guittard or Ghirardelli. Our favorite for chocolate covered strawberries is Guittard semi-sweet chocolate chips: Slightly larger than regular chips, they have a smooth and crunchy chocolate coating. What are the best toppings for chocolate covered strawberries? There are so many fun ideas. Here we used crushed pistachios and crushed freeze-dried raspberries, which makes for a wonderfully vibrant color contrast! But we’ve used many other toppings, all of which are fun.

Variant: Strawberries with white chocolate

Want a twist on these chocolate-covered strawberries? Use white chocolate instead! We prefer semi-sweet, but you can swap out white chocolate or make it half and half. You can also drizzle with white chocolate, as you’ll see with many store-bought chocolate-covered strawberries. Here’s how:

  • Melt half of the white chocolate in the method above. Microwave in 30-second bursts, stirring in between.
  • After dipping in the chocolate, drizzle over the white chocolate with a fork. A fork is essential for getting nice, even lines (don’t use a spoon).

Important note: When buying white chocolate, make sure that cocoa butter (not vegetable oil) is listed in the ingredients for white chocolate. White chocolate with vegetable oil doesn’t melt as well.

After 30 minutes in the fridge, you can serve the strawberries immediately. Or place them in a sealed container lined with parchment or wax paper to separate the layers. Store chocolate covered strawberries in the fridge for up to 5 days.

  • 1 pound ripe strawberries
  • 5 ounces semi-sweet chocolate chips (like Guittard or Ghirardelli)
  • Toppings: Streusel, crushed pistachios (shown), crushed freeze-dried raspberries (shown), crushed walnuts, toasted coconut, white chocolate for drizzling, etc.

  1. Wash and dry strawberries: Wash the strawberries and gently pat dry so they are as dry as possible.
  2. Line a baking sheet and prepare the toppings: Line a baking sheet with parchment or wax paper. Prepare all of your toppings ahead of time and place them in bowls next to the baking sheet.
  3. Melt chocolate: Place the chocolate chips in a dry glass measuring cup or small glass cup or bowl: the smaller the better. (Make sure it’s completely dry or the chocolate will burn.) Microwave on high for 30 seconds, then stir. Microwave for another 30 seconds, stir and stir for another 30 seconds. At this point it should be mostly melted with a few pieces: keep stirring until all the chocolate bits are gone and the chocolate is perfectly smooth. (Continue stirring if it doesn’t melt completely. You can try another 10-second batch and stir again, but you want to avoid overheating the chocolate.   4. Dipping strawberries and adding toppings: Hold the green part of a strawberry. Dip the strawberry in the chocolate, remove and turn to allow excess to drain. Place the strawberry on the baking sheet. Sprinkle with toppings immediately, as chocolate dries out quickly.
  5. White chocolate coating (optional): For a white chocolate drizzle, use 2 ounces of white chocolate and melt in the same manner as semisweet. Dip a fork into the white chocolate and pour it over the semi-sweet chocolate. Note: Make sure cocoa butter (not vegetable oil) is listed in the ingredients list for white chocolate. White chocolate with vegetable oil does not melt well.
  6. Refrigerate: Chill the strawberry tray for 30 minutes. Serve immediately or refrigerate until ready to serve. They’re best the day they’re made, but they can be kept uncovered for up to 1 day (don’t put them in a sealed container or they’ll get soggy).
