Here’s an easy and fun dessert, snack, or treat that’s perfect for those chocolate cravings: Chocolate covered almonds! Sure you can buy them in stores, but what’s the fun in that? Make them at home for a fun homemade snack that’s a rich, chocolatey bite. Make them plain or add flaky sea salt or sprinkles to take them to a whole new level. Here’s how to make this easy, healthy treat!

Best chocolate to use

Chocolate covered almonds are as good as the chocolate you use! Higher quality chocolate gives the best result, but tastes great with a variety of different flavors.

  • Use semisweet or bittersweet chocolate. Semi-sweet has a sweeter finish. Dark chocolate almonds are richer and chewy: use about 60% dark chocolate.
  • Use either chocolate chips, caramel waffles, fritters, or a candy bar. If possible, use high-quality branded chocolate chips such as Guittard or Ghirardelli. Our favorite, which we also use in Chocolate Covered Strawberries, are Guittard Semi Sweet Chocolate Baking Chips. Slightly larger than regular chips, they form a smooth, crunchy chocolate coating.

How to make Chocolate Covered Almonds

Chocolate Covered Almonds are easy to make at home! The basic idea? Melt the chocolate, add the almonds, then remove and leave to dry. How do I coat them evenly on each side? Here’s how:

  1. Melting chocolate and coconut oil in the microwave: Place the chocolate chips in a dry, heatproof bowl. Microwave on high for 30 seconds, then stir. Cook in two more 30-second bursts, stirring after each one. Add coconut oil. At this point it should be mostly melted with a few pieces: keep stirring until all the chocolate bits are gone and the chocolate is perfectly smooth.
  2. Add Almonds: Add the almonds directly to the chocolate. Then pour them onto a single sheet of parchment paper.
  3. Remove each almond with a fork. Using a fork, loosen each almond from the sheet, shaking the fork to allow excess chocolate to drip off, then place on a parchment-lined baking sheet. (Having the help of a partner or friend here helps!) If you plan to add flaky salt or nuggets, add them here.
  4. Refrigerate: Refrigerate the tray for 20 minutes.

Why aren’t homemade almonds shiny?

Homemade Chocolate Covered Almonds are rich and irresistibly good. But you might notice that they don’t have the glossy coating like store-bought bags. Why?

  • Many store-bought chocolate-covered almonds go through a process called sugar baking. This adds a very light coating in an edible oil or wax.
  • Homemade almonds always taste good! While they don’t have the same thick coating as store-bought brands, they’re still delicious.

Other topping ideas

Chocolate-covered almonds are actually ideal without toppings, as the toppings can fall out during storage. However, it’s fun to get creative and have a colorful pop in your tonsils too! We love them with a sprinkling of flaky sea salt. But if you prefer, you can add some of these colorful elements:

  • asparagus
  • Finely chopped freeze-dried strawberries or raspberries
  • Grilled Coconut
  • crushed biscuits

Store chocolate covered almonds

Almonds covered in homemade chocolate are different from store-bought: don’t expect to keep them in the cupboard! It is best to store homemade almonds in the fridge. They will keep in the fridge for up to 1 month.

  • 1 cup whole roasted almonds
  • 4 oz semi-sweet or bittersweet chocolate chips (like Guittard or Ghirardelli – approx ¾ cup)
  • 1 teaspoon refined coconut oil
  • Flaky sea salt, optional

  1. Prepare the baking sheet: Line a baking sheet with parchment or wax paper. Place a separate sheet of parchment paper next to the baking sheet.
  2. Melt chocolate: Place the chocolate chips in a heatproof bowl. (Make sure it’s completely dry or the chocolate will burn.) Microwave on high for 30 seconds, then stir. Microwave for another 30 seconds, stir and stir for another 30 seconds. At this point it should be mostly melted with a few pieces: keep stirring until all the chocolate bits are gone and the chocolate is perfectly smooth. Add coconut oil. (Continue stirring if it doesn’t melt completely. You can try another 10-second batch and stir again, but you want to avoid overheating the chocolate.   3. Add Almonds: Add the almonds and stir until completely covered. Then place them on the separate sheet of parchment paper, leaving excess chocolate in the bowl. Remove them one by one with a fork, shake the fork to drain excess chocolate, and then place them on the parchment-lined baking sheet. (Tip: It’s quicker with a partner or friend!) Sprinkle with flaky sea salt, if you like.
  4. Refrigerate: Chill the tray for 20 minutes until the chocolate hardens. Serve immediately or refrigerate for 1 month.
