  • 1 ¼ cup mashed ripe bananas (3 medium bananas)
  • ½ cup butter
  • 2/3 cup granulated sugar
  • 2 large eggs (or flax eggs for vegans)
  • 1 tbsp vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon Cinammon
  • ½ teaspoon kosher salt
  • 1 cup all purpose flour
  • ½ cup whole wheat flour
  • ¾ cup semi-sweet chocolate chips

  1. Preheat: Preheat the oven to 350 degrees Fahrenheit. Butter an 8- or 9-inch loaf pan.
  2. Fry butter: Place the butter (cut into chunks) in a pan over medium-high heat. Heat for a few minutes until melted, becomes frothy, then begins to turn golden brown and smell nutty. Immediately remove from the heat and transfer to a bowl to cool for a minute before adding to the batter.
  3. make dough: Mash bananas in bottom of large bowl, enough for 1 ¼ cups. Add sugar, egg and vanilla extract. Add the hazelnut butter when done.
  4. In another bowl, combine baking powder, cinnamon, kosher salt, all-purpose flour, and whole wheat flour. Pour into the bowl with the wet ingredients and mix with a spoon. Gently stir in ½ cup chocolate chips.
  5. Bake: Pour the batter into the loaf pan and garnish with the remaining ¼ cup chocolate chips. Bake until a toothpick inserted into the center of the loaf comes out clean (or the internal temperature is 200 degrees), 55 to 60 minutes: the exact time depends on the size of the pan. Optional: Add a pinch of fleur de sel when you take the bread out of the oven.
  6. Cool: Cool in the pan for 15 minutes. Then run a knife around the edge and invert the bread onto a cooling rack. Serve warm or at room temperature. Storage information: Bread keeps 4-5 days at room temperature wrapped in foil, refrigerated 10 days, or frozen 3 months (cut into pieces and wrapped in plastic wrap and then placed in a freezer-safe bag or container).
