Chocolate and cherries are the perfect combination, right? Alex and I envisioned this rustic cherry galette as a sweet treat for a party. A galette is a rustic cake: “rustic” means that no cake plates or ramekins are needed. Instead, simply roll out the dough, spread it over the filling, fold the crust over it and bake. Make this cherry galette

Alex and I hadn’t made a galette in a while, and this cherry galette reminded me how easy it is. Tart Montmorency cherries make a great garnish, combined with the sweetness of maple syrup, some lemon for shine and just a hint of cinnamon and nutmeg. To finish, drizzled with a little dark chocolate, the star is our rye galette crust: flaky and slightly nutty thanks to the rye flour.

We tried this cherry galette on friends and it got rave reviews! They even saved a piece for their 7 year old the next day. I got a text in the morning that the 7 year old said it was “spectacular!“That’s the best compliment ever. (It also proves you can eat leftover cherry patties for breakfast.)

Tart Cherry Diet

The variety of cherries we used here are called Montmorency tart cherries – they have a delicious tart flavor and are perfect for baking in a cherry galette or cherry pie. Montmorency tart cherries have been linked to cardiovascular benefits. The sour cherry variety is not sold fresh because the fruit is very sensitive when picked; Instead, they are sold year-round in dried, frozen, canned, and juiced forms. We used frozen cherries for this cherry galette.

A good place to start for fighting cardiovascular disease is to eat more fruits and vegetables, especially dark-colored produce, which are packed with heart-healthy compounds. This tart cherry galette is easy and so delicious. Drizzled in dark chocolate, this is one of the tastiest chocolate and cherry desserts around.


  • 1 Rye Pie Crust or Go-To Galette Dough
  • 2 cups frozen Montmorency tart cherries
  • 1 tbsp lemon juice
  • 6 tablespoons maple syrup
  • ½ teaspoon vanilla extract
  • ½ teaspoon Cinammon
  • 1 Pinch of freshly grated nutmeg
  • 1 pinch of kosher salt
  • 1 tbsp cornstarch
  • ½ tbsp butter without salt
  • ¼ cup semi-sweet chocolate chips

  1. Before assembling the pie, prepare the rye crust (or prepare it ahead of time and freeze it).
  2. Preheat oven to 375°F.
  3. In a skillet over medium-high heat, heat sour cherries, lemon juice, maple syrup, vanilla, cinnamon, nutmeg, and salt. When simmering, simmer 3 minutes, until cherries are warmed through. In a small bowl, dissolve the cornstarch in 1 tablespoon water, then stir into the mixture and heat an additional 2 minutes, until the juice has thickened into a thick sauce.
  4. Line a baking sheet with parchment paper. On a floured surface, roll out the dough into a rough circle about 12 inches in diameter. Place the dough on the parchment paper. Arrange the cherries in the center of the batter and spread them out to within 1 inch from the edge of the crust. Fold the edges of the pastry over the cherries.
  5. Melt the butter and spread it over the dough. Bake until crust is golden brown, about 40 minutes. Cool down for 30 minutes.
  6. When the patty has cooled, add about 1 inch of water to a medium saucepan and bring to a gentle boil. Measure out ¼ cup of chocolate chips, then scoop out a small handful. Heat the remaining chocolate in a small saucepan set over the pot of simmering water, being careful not to let the water touch the bottom of the bowl. Stir constantly until just melted. Add the remaining chips and stir until the chocolate is completely smooth.
  7. Pour the chocolate into a ziplock bag and zip to seal, then cut off the top to make a very small opening. Drizzle the chocolate back and forth over the galette. Let dry about 30 minutes before serving (or serve immediately if you can’t wait).
