OK, we get it. Valentine’s Day can be cheesy and over the top. On the other hand, it’s an excuse to eat delicious food with people you love! When I was growing up, my mom would decorate our house with red hearts and put Valentine’s Day on my bedroom door. Now that little Larson is in the picture, it gives Alex and I a whole new excuse to celebrate the holidays. These Chocolate Cherry Bites are a perfect dessert for Valentine’s Day: or any time of year really! They’re vegan and simply made with clean ingredients.

Sweet cherries are cherries of a sweet variety that are usually eaten fresh. There are different varieties of sweet cherries; The most common is Bing. These fresh cherries are quite dark – sometimes almost purple or black. Montmorency tart cherries, also known as tart cherries, are bright red when picked and are typically eaten dried, frozen, or juiced.

Fresh Northwest sweet cherries are only available during the summer months, but frozen or dried cherries are a great alternative that allows you to enjoy the health benefits of cherries year-round. These decadent Chocolate Cherry Dessert Bites are made with pure ingredients: just cocoa, maple, coconut oil, oats, almonds, and cherries!


For the dough

  • ¼ cup raw almonds
  • ½ cup Old-fashioned oats
  • 1 tbsp refined coconut oil
  • 1 tbsp maple syrup
  • 1 tbsp Dutch cocoa powder (cooking cocoa)
  • 1 Pinch of cinnamon
  • 1 pinch of kosher salt

For garnish

  • 4 tablespoons Dutch cocoa powder
  • 5 tablespoons maple syrup
  • 6 tablespoons refined coconut oil
  • 1 cup frozen sweet cherries (approx. 5 ounces)

  1. For the crust: In a food processor, blend almonds, rolled oats, coconut oil, maple syrup, cocoa powder, cinnamon, and kosher salt for a few seconds. Scrape the bowl, then pulse until an evenly chopped and crumbly mixture forms, scraping again if needed. Put the pasta in a muffin pan (optional). Add 1 tablespoon of the crust mixture to each cup and press down with your fingers for a total of 9. Reserve the rest of the crust for garnish.
  2. For the filling: Wash and dry the bowl of the food processor. Then add the cocoa powder, maple syrup and coconut oil and mix until creamy for a few seconds. Using a spoon, place a spoonful on each of the 9 crusts and gently smooth out.
  3. Defrost and gently chop the cherries, then drain the excess liquid. Sprinkle the chopped cherries over the chocolate, then add some crust crumbs. (There may be a few crust crumbs left that you can throw away.)
  4. Freeze for 20 minutes to set. Thaw at room temperature for about 10-15 minutes before eating. Keep refrigerated.
