Alex and I work in the food industry and have the pleasure of working with a new wave of mission-driven companies working toward positive change in the food system. One Degree Organics is one such company. When I first spoke to Sondra, the daughter of the founders, I could see that this is a company based on mission and values. She’s a new mom and our son Larson was only a few months old at the time, so we chatted about the joy of being moms to little boys.

Sondra spoke about her family’s business and how their goal is to bring food straight from a farm to your table so there is only one degree of separation between you and the person who grew your food (like at a farmers market) . What is spelled flour and why is it used?

As I browsed through their product offerings, I was drawn to the rungs spelled flour. Why cook with spelled flour? Alex and I love to bake and cook with whole grains. However, we have found that using whole wheat flour can make things very dense and almost bitter. We did some research on spelled flour and found it to be a great alternative to baking whole grains. This is how we were inspired to use flour in these spelled pancakes! Here is some information about spelled flour:

  • Spelled flour is a whole grain flour that contains a sweet and nutty taste against the bitterness of whole wheat flour
  • canned spelled flour texture your fluffy-soft baked goods and does not weigh them down
  • Since spelled flour contains a good amount of gluten-forming protein, it makes a good all-purpose flour substitute in baking. You can use up to 100% in less textured pastries like these pancakes (and 50% in muffins and breads). Compare that to the substitution rate for whole wheat flour, which is typically 25%.
  • The spelled flour we’ve been working with here is sprouted spelled flour. Sprouted flours are less processed than typical flour, have increased nutritional value, and are easier to digest.

How to make spelled pancakes

And now the recipe. To use this whole grain flour, we have developed a recipe for healthy pancakes: these 100% spelled flour pancakes. We wanted the vegan pancakes to be special, so we went for a chocolate brownie spelled pancake! They are lightly sweetened and made with maple syrup and cocoa powder. The resulting pancakes were so fluffy and chewy that we settled on the name “Chocolate Brownie,” although of course they weren’t quite as sweet as a brownie! Be sure to drizzle with maple syrup as this adds a final touch of sweetness. What about spelled flour? It gives our spelled pancakes a subtle nutty note How. Spelled flour is great for baking with whole grains because it can be 50% to 100% underprocessed and has added nutritional value.

For the topping of these spelled pancakes, we added another specialty: coconut bacon. It’s easy to make just before pancakes, or make it a few days before and store in the freezer. The smoky, salty, crunchy topping on the fluffy pancakes is perfect: but they’re almost as good when just topped with fresh raspberries and drizzled with maple syrup.

These Spelled Chocolate Brownie Pancakes look rich, but they’re a whole grain breakfast without refined sugar, with spelled flour and maple syrup.


For the spelled pancakes

  • 1½ cups One Degree organic spelled germ flour (or all-purpose flour)
  • ½ cup Dutch process powder
  • 1 tbsp baking powder
  • 1 teaspoon Cinammon
  • ¼ teaspoon kosher salt
  • 1½ cups Almond milk
  • ¼ cup plus 2 tablespoons maple syrup
  • ¼ cup Coconut oil, melted and cooled
  • 2 teaspoons vanilla extract
  • vegetable oil, for cooking

For garnish

  • Maple syrup for drizzling
  • 1/2 Coconut Bacon Recipe
  • 6 ounces raspberries

  1. If using, prepare the coconut bacon.
  2. Whisk together the spelled flour, baking powder, cocoa powder, cinnamon, and kosher salt in a large bowl until well combined. Add almond milk, maple syrup, coconut oil and vanilla. Mix with a wooden spoon until just combined.
  3. Heat a large skillet over medium-high heat and brush with some vegetable oil. Spoon ¼ cup batter into pan. After a few minutes, when bubbles appear and the bottom is crispy, flip the pancakes very gently. Be very careful when flipping as the batter is a little less elastic than a typical pancake. Fry the other side until crisp, then remove from the pan and place on a plate covered with a kitchen towel. Repeat with the rest of the batter, adding a touch of almond milk if it gets too thick (we had to do this consistently in making the recipe).
  4. Serve with a drizzle of maple syrup, coconut bacon, and raspberries if desired.
