Why Make This Chipotle Quesadilla?

This vegetarian chipotle quesadilla recipe is all about small steps to a big diet change. If you’re not quite ready for one of these hippie-style Buddha vegetable bowls but want to clean up your diet, this is for you. It’s a familiar recipe with mass appeal, but it’s homemade with natural whole foods and packed with both nutrients.

More importantly, this chipotle quesadilla is bursting with flavor — the kind that has Alex and I both muttering “Whoa” as we chew the first bite. The key ingredient here is creamy avocado, which adds healthy fats and richness to the filling without the need for a ton of cheese. And the tangy chipotle lime tahini sauce is the highlight. I may have licked the bowl clean (ok, I did).

Consuming this chipotle quesadilla is not a health elixir, but research is starting to show that good nutrition has a major impact in preventing conditions like type 2 diabetes and heart disease. Driven by our passion for the connection between food and health, we created this vegetarian chipotle quesadilla recipe in collaboration with the Hass Avocado Board. The Hass Avocado Board of Directors has partnered with the American Diabetes Association in a nationwide Stop Diabetes movement to raise awareness of the role good fats play in everyday nutrition. Not that you need any more motivation to eat the avocado, but it’s packed with healthy fats and nutrients! Here is some nutritional information about avocado:

  1. Avocados naturally contain good monounsaturated fats and are cholesterol-free.. Research now shows that good natural fats are an important part of a healthy diet.
  2. Over 75% of the fat in avocados is unsaturated, This makes it an excellent substitute for foods high in saturated fat.
  3. Avocados are nutrient dense, containing 8% of the Daily Value of fiber per serving. A diet high in fiber foods has been shown to potentially reduce the risk of type 2 diabetes. Fiber also adds bulk to a sensible diet, which helps induce a feeling of fullness.
  4. Avocados have less than 1 gram of sugar per 1 ouncethe lowest amount of sugar per serving of other fresh fruits.
  5. Avocados contain almost 20 vitamins, minerals and phytochemicals, making it a good choice for meeting nutritional needs. Although phytonutrients are not essential, they can support human health.
  6. Avocados act as “nutrient boosters” by helping the body absorb fat-soluble nutrients bettersuch as alpha and beta carotene and lutein, foods eaten with fruit.

What’s in that chipotle sauce?

The chipotle in this chipotle quesadilla comes from a little adobo sauce made from a can of chipotle peppers. Chipotle in adobo sauce are sold here in the United States in most major grocery stores that line up alongside Mexican products. The small box includes Chipotle peppersthese are smoked and dried jalapeños that are then rehydrated and canned Spanish spice and marinade mixa tomato puree, vinegar, garlic and some other spices.

Most of our recipes call for a very small amount of adobo sauce because it’s super strong! In this sauce, we called for just 1 teaspoon of adobo sauce (which has small pieces of chipotle peppers in it). You can freeze the leftover chipotle pepper in adobo sauce for later use.

  • 1 Chipotle hot sauce recipe
  • 15– ounces of black beans
  • ¼ teaspoon cumin
  • ½ tbsp olive oil
  • ¼ teaspoon kosher salt
  • 2 lawyers
  • 1 ½ cups grated Mexican cheese mix
  • 1 cup Corn kernels, frozen or fresh
  • 8th Wholemeal tortillas (or gluten-free tortillas)
  • cilantro, for garnish

  1. Prepare the chipotle hot sauce.
  2. Drain and rinse black beans. In a small bowl, mix them with cumin, olive oil, and kosher salt.
  3. Cut the avocados into thin slices (see video instructions).
  4. For each quesadilla, place one tortilla on a plate and spread evenly with cheese, black beans, corn, sliced ​​avocado, chipotle sauce, and then additional cheese.
  5. Heat a large non-stick pan* over medium-high heat for a few minutes. Place the loaded tortilla on the griddle and place another tortilla on top. Fry until golden brown, then flip and cook on the other side until golden brown on each side, a few minutes.
  6. Take out the tortilla and cut into pieces with a pizza cutter. If making multiple quesadillas at once, keep them warm in a 300°F oven until ready to serve. Serve with chopped cilantro and additional chipotle sauce.
