We’re in something of a kale streak as we hear more and more questions about what to do with it. We stuffed it with potatoes and topped it with Italian cheese, but how about plain old kale baked in kale chips?

If you like to snack (like us!), kale chips are a great healthy alternative. They are quite easy to prepare. And while it takes a little longer than opening a bag of chips, the end result is definitely worth it! I admit the texture takes a little getting used to. They’re a little brittle and more of a melt-in-the-mouth snack—so don’t dip them in salsa!

How to make kale chips

Alex and I bought kale at our local farmers market. We decided to make baked kale chips with the beautiful leaves. To make kale chips, all you have to do is cut the kale into “chips” and toss them with a little olive oil. Then sprinkle with some seasoning: we used a smoky chipotle seasoning that we had on hand. The smoky and spicy mix is ​​perfect, but feel free to use any spice you like. There are many interesting spice mixes that would be delicious to try. Just be careful not to get too heavy with the spices or salt: a light pinch will do! Then cook the kale for 20 minutes until crispy – and you have a uniquely filling snack!

Baked Kale Chips are the best way to eat kale! You won’t be able to stop eating these salty and crunchy kale chips, a delicious and healthy snack.


  • 2 bunch of kale
  • 1 tbsp olive oil
  • Smoked Chipotle Peppers (we used Victoria Taylor’s); Substitute smoked paprika powder or paprika

  1. Preheat oven to 300°F.
  2. Rinse the kale, then dry it completely. Cut the kale into large pieces the size of french fries. In a bowl, mix the kale with the olive oil.
  3. Line two baking sheets with parchment paper. Place the cabbage leaves in one layer on the foil. Lightly sprinkle with a small amount of smoked chipotle peppers or any other spice of your choice (add kosher salt if it’s not already in your spice mix).
  4. Bake for about 20 minutes until crispy. Cool slightly before serving. Once fully cooled, the chips can be stored in an airtight container for several days. Take care when storing, kale chips are somewhat fragile.

Remarks

The smoked paprika chipotle seasoning gives the chips great flavor. If you can’t find this or something similar, use the substitutes below or any of your favorite spices or blends! Make sure your hand isn’t too heavy when sprinkling the fries.
