Nowadays you can find all kinds of flavored aioli in restaurants for dipping chips. But the best aioli? Self-made. Here’s a little more about this special sauce and how to make homemade chipotle aioli.

Aioli versus mayonnaise

What is aioli? Isn’t that just another word for mayo? Aioli is a sauce that comes from southern France and Spain. The traditional version consists of garlic mixed in a mortar and pestle with egg yolk, lemon juice or vinegar and olive oil. But since the 1990s, Americans have called any flavored mayonnaise “aioli.” Mayo is made with only canola oil and no garlic. In short, many flavored aioli you’ll find in stores or restaurants are made with mayonnaise.

This chipotle aioli recipe uses a mayonnaise base because it’s the quickest way to make an excellent aioli at home. But you can also prepare it using the traditional aioli method (read on). What you need for the basic recipe:

  • High quality mayonnaise: Quality really makes a difference here! We love a mid-range mayonnaise like Sir Kensington’s
  • Chipotle Peppers in Adobo Sauce: the key! Learn more below.
  • Garlic

Using chipotle peppers in adobo sauce

The key to chipotle aioli? A box of chipotle peppers in adobo sauce! This magical ingredient gives aioli a smoky spiciness and you can use it in many other recipes. Here’s what you should know about working with this ingredient:

  • Chipotle with Adobo sauce are sold in most grocery stores here in the United States and are available near Mexican produce. The box includes Chipotle peppers: smoked and dried jalapeños that are rehydrated and canned, and Spanish spice and marinade mixa puree of tomatoes, vinegar, garlic and other spices.
  • Finely chop the chillies with a knife and then grind them into a paste. This yields the most advanced spicy chipotle flavor! The sauce will be a bit thick with this method.
  • If desired, pass the sauce through a fine sieve. If you’re looking for a perfectly smooth sauce, use a spatula to strain it through a fine-mesh sieve. It’s an extra step, but it makes it nice and smooth, just like the pictures.

Why can’t you just use adobo sauce in this recipe? In many of our recipes, we only use the adobo sauce from the canned chipotle peppers, not the peppers themselves. However, we have found that using only adobo sauce makes the chipotle aioli too runny. Paprika is the key!

Adjust the sauce to your liking

With the indicated 2 tablespoons of chopped chipotle peppers, these chipotle aioli are medium hot. It’s not very spicy, which is what we like for an aioli, so it’s not overwhelming. do you like the heat Taste the aioli and adjust to your desired level of spiciness by adding more chili to taste.

Forget the mayonnaise and make a classic aioli

  • 2 tablespoons finely chopped chipotle pepper in an adobo sauce*
  • 1 Garlic clove, grated
  • ½ cup high-quality mayonnaise
  • ⅛ teaspoon cumin
  • ⅛ teaspoon kosher salt

  1. Using a large knife, thinly slice the chipotle peppers, then mash them as thinly as possible with the side of the knife.
  2. In a medium bowl, combine 2 tablespoons of crushed chipotle peppers with the grated garlic, mayonnaise, cumin, and kosher salt. (To taste, and if you like, you can add more chipotle for an even spicier kick.)
  3. For a perfectly creamy sauce, press the sauce through a fine sieve with a spatula. Can be kept in the fridge for up to 2 weeks.

*To make a traditional aioli instead of a mayonnaise-based aioli, prepare 1 classic aioli recipe, then combine with the chipotle peppers and cumin seeds as described in step 2.
