Alex and my son Larson are only 3 months old but in that time he has brought us closer to our extended family and taught him the joys of grandparents, aunts, uncles and cousins. Speaking of which, I never met my maternal grandfather. He died when my mother was only 8 years old of a heart attack. I’ve always wondered how he’s doing. Would he have been a mentor figure for me? Did he tell stories? was he funny My mother always told me that she never considered living past 35 as her father didn’t go that far. Luckily my mother is happy and healthy today, but that got me thinking. What can Alex and I do to make sure we’re here to enjoy the future with Larson and his kids?

Of course we can’t change the future or avert a catastrophe, but what we can do is appreciate our health. While we’re not in complete control, we can take steps to ensure our bodies are strong and healthy. Ever since my grandfather died of a heart attack in 1961, Cardiovascular disease remains the leading cause of death for both men and women in North America. At the same time, changes in diet and exercise can go a long way in keeping your heart healthy.

These chickpea burgers with sour cherry salsa are inspired by heart health. They’re packed with nutritious veggies and contain tart cherries, as researchers have found that Montmorency tart cherries may offer a range of cardiovascular benefits. Why cherrycake? The health benefits come mainly from anthocyanins, a type of antioxidant found in brightly colored fruits and vegetables. Studies show that Montmorency tart cherries may help lower cholesterol and triglyceride levels, reduce inflammation, and improve belly fat. This Chickpea Burgers with Spicy Cherry Salsa recipe is a delicious plant-based healthy dinner idea perfect for meatless Mondays.


For the chickpea burgers

  • 15-oz can of chickpeas (1½ cups cooked)
  • 2 tablespoons Sesame seeds
  • 1 big carrot
  • ½ Red onion
  • 3 Garlic cloves
  • ½ cup coriander leaves (or parsley)
  • 6 tablespoons Flour of any kind (possibly gluten-free)
  • ¾ teaspoon cumin
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 3 tablespoons Grape seed or vegetable oil (for frying)

For the spicy cherry salsa

  • 1 cup dried Montmorency sour cherries
  • 2 tablespoons maple syrup
  • 6 tablespoons lime juice (2 Lemons)
  • 1 cup chopped yellow pepper
  • 1 large jalapeno peppers
  • ½ cup chopped red onion
  • ½ cup lightly packed chopped fresh coriander
  • ¼ teaspoon kosher salt

Serve


  1. Preheat oven to 375°F.
  2. For the chickpea burgers: Drain and rinse the chickpeas. Pat the chickpeas dry with a paper towel to remove excess moisture, then place in the bowl of a food processor. Add the sesame seeds and then mix until you get a paste-like consistency. Pour the mixture into a bowl.
  3. Roughly chop the carrot and peel and chop the red onion. Peel the garlic. Place the carrot, onion, garlic, and cilantro in the bowl of the food processor; Pulse ground until fine. Scrape the vegetables into the bowl with the chickpeas.
  4. Stir in the flour, cumin, kosher salt, and black pepper. Mix with a spoon, then shape into 4 round patties and place on a plate.
  5. In an ovenproof skillet, heat 3 tablespoons oil over medium-high heat. Place the patties in the pan, cover and cook until golden brown, about 4-5 minutes, then flip and cook for another 4-5 minutes until golden brown. golden brown, reduce heat if necessary.   6. For the sour cherry salsa: In the meantime, roughly chop the sour cherries. Put all ingredients in the bowl and stir. Leave at room temperature until ready to serve.
  7. Mix together the mayonnaise and hot sauce. Toast the English muffins.
  8. To serve, place the chickpea burgers on top of the English muffins and spread the tops of the muffins with flavorful mayonnaise. Garnish with sour cherry salsa and serve. Eat leftover salsa with fries.
