We’ve been taking some creative risks lately, and man – Resistance is here with us. It may seem simple from the outside. But every recipe and photo is an effort as Alex and I learn the dance of holding boards, spoons, and napkins that bounce off the light, like those dairy-free chai waffles. And our A Couple Cooks podcast – it’s both a joy and a big risk as we dabble in new skills like interviewing (um-free) and editing audio instead of photos. It has become easier and easier to get our work out there over the years, but after almost 6 years it still gives me tingles.

But we keep going because we really, really, really love him. It makes us feel alive. And knowing that you are copying some of the recipes we post here and that they are nourishing your life – that’s important to us. A lot. Because our dream is that through our photographs and stories, more people will experience the joy of cooking and be inspired to advocate for sustainable consumption patterns and the right to nutritious food for all.

In last week’s post we talked about dreams and loved hearing what you’re thinking. This week we want to hear about both your dreams and your fears. How to make dairy free waffles

This recipe was an accident, a challenge to create a recipe with almond milk. We ended up with dairy-free waffles and a bit of whole wheat flour for a healthy twist. What makes them dairy free? Using almond milk instead of regular milk is an easy swap and results in perfectly fluffy waffles! And instead of butter, we used coconut oil: you can replace the coconut oil with any neutral oil if you like.

And now the best part about these dairy-free waffles: the taste of the chai spices! Lately we’ve been experimenting with adding chai flavor by making things like Spiced Chai Cookies and Spiced Chai Jam and it’s amazingly good! The key to flavoring chai is cardamom, so find ground cardamom if you can!)

For the filling of these dairy-free waffles, we’ve used frozen berries to create a delicious berry compote, tangy and sweet with maple syrup. He’s made both shocking pink kitchen stains and a delicious topping.

These dairy-free waffles are fluffy and flavored with chai spice! Made with almond milk and coconut oil, they’re a delicious dairy-free breakfast option.


For the berry compote

  • 1 pounds frozen mixed berries
  • 2 tablespoons maple syrup
  • 1 tbsp cornstarch

For dairy-free waffles

  • 1 cup all purpose flour
  • ½ cup whole wheat flour
  • 2 teaspoons baking powder
  • ½ teaspoon every ground cinnamon, ginger, cloves and cardamom
  • ½ teaspoon kosher salt
  • ¼ cup coconut oil
  • 1 big egg
  • 1 ¼ cup Almond milk (we used Califia Farms)
  • ½ teaspoon vanilla extract
  • 2 tablespoons maple syrup

  1. Make Compote: Place frozen berries and maple syrup in skillet over medium-high heat. Stir for a few minutes until the fruit is thawed. In a small bowl, combine the cornstarch with 1 tablespoon water, then pour into the pan and heat until the sauce thickens. If desired, add additional cornstarch mixed with water for a thicker sauce.
  2. Heat the waffle iron over high heat.
  3. Combine flour, baking powder, spices, and salt in a medium-sized bowl; mix to combine.
  4. In a microwave-safe bowl, melt the coconut oil. In another bowl, whisk the egg, then add the milk, coconut oil, vanilla, and maple syrup.
  5. Add wet ingredients to dry ingredients and stir until just combined; don’t overmix.
  6. Pour the batter into the heated waffle iron and bake the waffles until golden brown. Take out the finished waffles and place them on a baking sheet without stacking them. Cook to order or place in a 300F oven to keep warm.
