You only need a handful of ingredients for a celery salad: and we promise it will be the talk of the town at your dinner party! (At least, it is every time we serve it to our guests.) Combining the bitter depth and crunch of celery with sweet apples and a zesty dressing results in a one-of-a-kind salad that never fails to surprise. Here’s what you need:

  • Celery: Make sure it’s nice and fresh: light green with no brown spots! You’re going to want the best celery here.
  • Apple: You can use any variety of apple: we like to use a red apple for color contrast
  • parmesan pieces: The better the parmesan, the better the salad.

Use the celery rib and leaves!

This Celery Salad enhances the flavor of this leafy vegetable by using celery leaves as part of the salad! You will thinly slice the celery ribs, then remove the leaves and use them as well. Make sure you find a bunch of celery with leaves (some bunches are sold without leaves). If you can’t find the leaves you can omit them, but it adds to the fresh flavor and gives a nice color contrast too.

How do you make a celery salad? Thinly slice the celery, thinly slice the apples, then mix with the dressing. It is so easy! One thing to remember about the salad is that it tastes better immediately. The flavor really pops and is at its freshest when you make it.

However, you can keep the salad in the fridge until ready to serve, or keep leftovers for a few days. If you do, you might find the taste a bit boring. Add a pinch of salt or a small sprinkling of white wine vinegar to liven up the flavors.

  1. Hold the core of the apple and use a large chef’s knife to cut through all four sides of the apple, as close to the core as possible.
  2. Take one of the wedges and lay it flat on the cutting board. Then cut into thin slices.
  3. Repeat with the remaining quarters!

This salad goes with almost anything, making it an incredibly versatile side dish! Here are some possible combinations that we recommend:

  • With more salads! Serve as a salad trio for a summer salad meal! Try it with tortellini salad, watermelon feta salad, antipasti salad, lamb’s lettuce or grilled lamb’s lettuce, coleslaw, russet lettuce, tomato and basil salad, or a carrot salad.
  • Seafood. Try it with baked salmon, grilled salmon, pesto salmon, grilled tilapia, garlic shrimp, grilled shrimp, ahi tuna, lightly seared cod, grilled scallops, or seared scallops with lemon herb sauce.
  • Pasta. Add it to roasted cauliflower pasta, roasted eggplant, butternut squash, creamy cavatappis, or your favorite vegan lasagna.

  • 8th Celery ribs plus ½ cup celery leaves
  • 1 Red Apple
  • 1 tbsp white wine vinegar
  • ½ tbsp Dijon mustard
  • 1 teaspoon maple syrup or sugar
  • ½ teaspoon kosher salt
  • 3 tablespoons olive oil
  • ¼ cup pieces of parmesan

  1. Thinly slice the celery ribs. Measure the celery leaves. Cut the red apple into thin slices.
  2. In a medium bowl, whisk together white wine vinegar, Dijon mustard, maple syrup or sugar, and kosher salt. Gradually add the olive oil, one tablespoon at a time.
  3. In another bowl, mix the celery and celery leaves with the apple, vinaigrette, and Parmesan shavings. Serve immediately or refrigerate until ready to serve. It tastes best the day you make it, but leftovers can be stored in the fridge for a few days (top up with a little vinegar or salt if needed).
