It’s like a switch has been flipped and everyone is looking at bowls of veggies instead of towers of cookies. Of course Alex and I love it because this website is all about eating more veggies. However, we know that interest in vegetables is fleeting. A new normal: a sustainable approach

What if bowls of veggies became part of our daily lives? Over the holidays we watched Michael Pollan’s new documentary In defense of the food, and I wanted to pump our fists in the air every two seconds (you can see it too!). Rather than making an elimination diet sensationalist, it urges us to focus on eating whole, unprocessed foods in reasonable amounts. Let’s eat mostly veggies, but don’t feel obligated to skip meat altogether (unless we want to). let’s go eat, not too much, especially plants.

Why isn’t a moderate and balanced approach sexy? Elimination diets are great for short term changes. But for a long-term healthy approach to eating, instead of a disastrous diet cycle (because we all know it!), let’s focus on small, achievable steps.

It’s been almost 8 years since Alex and I started eating whole foods, mostly vegetables, and I can say without reservation that our lives have never been more delicious, cheerful or rich. A bowl of cauliflower fried rice has never tasted so good. Yes, we are swayed by brownies, chocolates and cookies every now and then, but we crave fresh, seasonal veggies accented with intriguing herbs and spices.

Our hometown of Indianapolis has changed with us in those 8 years. It has evolved from a Midwestern fast-food town into a mecca of culinary life, thriving with urban farms, neighborhood farmers’ markets and trendy new restaurants. Eating fresh in our city has never tasted so good. And we look forward to continuing to bring healthy eating recipes to your city too! It is an honor to be part of your kitchen and your table.

How to make cauliflower fried rice

And now to the recipe, the fried cauliflower rice. Or really cauliflower rice that tastes like fried rice. what is cauliflower rice? Some of our friends recommended trying the cauliflower rice: Cut the cauliflower into small pieces that mimic the grains of rice. For their recipe, they deep-fried it in coconut oil and created Chinese-style fried cauliflower rice. Cauliflower rice is designed for grain-free and paleo diets, but we delved into it more for the novelty of it all. (See note on paleo recipes below.)

The judgment? The version of cauliflower fried rice we created turned out to be a fabulous taste treat. The cauliflower soaked up the flavorful ginger and garlic even more than the rice, and the bowl of piping hot veggies was comfort food at its best. To add extra protein to the dish, we loaded it with egg, edamame, and cashews. It was quite filling for a main course for both of us. However, you can double the recipe if you have very hungry eaters. Have fun and a happy new year!

We’re 90% vegetarian with legumes and whole grains, so we don’t have many paleo recipes on this site. However, this cauliflower fried rice recipe is one of the few Paleo recipes you can find right here! Roasted Cauliflower Rice is a delicious vegetarian and gluten-free main course. Cauliflower rice is grain-free, making it one of our favorite paleo (no edamame) recipes!


  • 1 medium cauliflower (6 at Seven flower cup)
  • 3 carrots
  • 2 medium garlic cloves
  • 1 ginger nuts (1 tbsp chopped)
  • 2 Green Onions
  • 2 tablespoons coconut oil, shared
  • 4 eggs
  • 2 cups frozen peeled edamame (omit for paleo or keto)
  • ½ teaspoon kosher salt
  • 2 tablespoons low-sodium soy sauce or coconut amino acids
  • ¼ cup Cashew nuts, for garnish

  1. Cut the cauliflower into large florets. Place half of the florets in the bowl of a food processor and process until completely broken up and the cauliflower looks like rice grains. Place the “rice” in a bowl and process the remaining cauliflower.
  2. Peel the carrots, then cut into small cubes. Peel and chop the garlic. Peel and chop the ginger. Cut the spring onions into thin slices.
  3. Melt 1 tablespoon coconut oil in a large skillet, then add the eggs and whisk, breaking them into small pieces. Take the eggs out of the pan.
  4. Heat 1 tablespoon coconut oil; Add the garlic and ginger and stir-fry for 30 seconds. Add the carrots and sauté for 2 minutes. Add the cauliflower rice and peeled edamame and cook, stirring, for 5 to 8 minutes. Season with kosher salt.
  5. Add soy sauce and boiled egg and stir until well combined. Remove from the heat and stir in the spring onions. Serve garnished with cashew nuts.
