This Zesty Carrot Ginger Dressing is packed with savory, savory, salty and sweet flavors – perfect for salads and bowls!


  • 2 tablespoons Ginger, peeled and chopped
  • 2 large carrots, peeled and roughly chopped (approx 1 cup)
  • 1 small spring onions, light green and white portions, thinly sliced
  • 2 tablespoons yellow or white miso*
  • 1 tbsp honey or sugar
  • ¼ cup rice vinegar
  • ⅓ cup neutral oil (e.g. grapeseed, peanut, organic vegetable or organic rapeseed oil)
  • 2 tablespoons tahini
  • ¼ teaspoon kosher salt

  1. Peel and chop the ginger with a spoon. Peel and roughly dice the carrots. Finely chop the spring onion.
  2. Place the vegetables in a blender with the remaining ingredients. Blend until smooth, stopping and scraping as often as needed. Can be kept in the fridge for up to 1 week.

Remarks

*It’s worth looking for yellow or white miso, which has a mild flavor. If you can only find black or red miso, you can use that, but start with 1 tbsp and add more as you like.
