There’s nothing cozier than baked oatmeal! This steel-cut baked oatmeal is flavored with carrot cake, pleasant spices and pecans.

I was at the grocery store the other day and a woman with a little girl stopped to smile at Larson. Larson’s face lit up and he held the girl’s hand for a moment. “The news is so depressing. Why can’t things like this be in the news? », asks the woman. I laughed. But really, with all the darkness and desolation, can’t two pretty girls holding hands at the grocery store make headlines just once? Read on to find out how this relates to Steel Cooked Oatmeal and the recipe.

Did you know that our human brain is more affected by negative events than positive ones? It’s the negative things that happen to us that we remember best. There’s a biological reason for this (it helps us run away and avoid danger), but it can also be difficult to overcome. That’s why we have the only criticism from 99 positive compliments. How to cook steel baked oatmeal

So this recipe is that of these gatherings where we can meet. This is a steel cut baked oatmeal recipe based on our favorite version of Pumpkin Pecan. And best of all, it’s an idea brought to us by a reader, Heather! She let us know that she makes our pumpkin groats So she created a few other “flavors.” When she mentioned a carrot cake version, I knew we had to try it.

This carrot cake baked steel cut oatmeal is cozy and comforting, sprinkled with orange carrots and flavored with cinnamon, ginger and nutmeg. Heather suggested another change to the original: Feeling “too lazy” to melt butter, she substituted olive oil and found the taste of cooked steel-cut porridge to be just as delicious. Since I’m into lazy hacks, we included olive oil in this version and loved it.

This steel-cut baked oatmeal takes over an hour to make. So make sure you prepare it when you have enough prep time. However, leftovers keep well and make a healthy breakfast recipe that lasts all week. It’s also a good dish for a special brunch. There’s nothing cozier than baked oatmeal! This steel-cut baked oatmeal is flavored with carrot cake, pleasant spices and pecans.


  • 3 Large carrots (1 ½ cups grated)
  • 2 tablespoons Extra virgin olive oil
  • 1 large egg (or flaxseed egg for vegans)
  • 2 cups 2% milk (or oat or almond milk)
  • ⅓ cup maple syrup
  • 1 teaspoon vanilla extract
  • 1½ teaspoons Cinammon
  • 1 teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon baking powder
  • ¾ teaspoon kosher salt
  • 1 cup Raw steel oatmeal (do not use oatmeal)
  • ⅓ cup Pieces of pecans

  1. Preheat the oven to 375F. Grease an 8×8 or 9×9 casserole dish.
  2. Peel and finely grate carrots, enough for 1 ½ cups.
  3. In a medium bowl, whisk together olive oil, egg, milk, maple syrup, and vanilla extract.
  4. In a small bowl, combine cinnamon, ginger, nutmeg, baking soda, and kosher salt. Pour into the bowl with the wet ingredients and whisk together. Stir in the oatmeal.
  5. Pour the mixture into the prepared casserole dish, then stir in the carrots and distribute evenly. Cover the pan loosely with aluminum foil.
  6. Bake 30 minutes. Remove foil and sprinkle with pecans. Bake an additional 30 to 35 minutes until set. Serve hot or refrigerate and eat leftovers for several days. (Note: These baked steel-cut oats are best hot or at room temperature. Leftovers keep well and can be reheated. To make it quicker, you can cook and reheat the whole casserole: or prepare the wet and dry separately and over Refrigerate overnight, put the carrots in a separate container, then mix and cook the next morning.)
