How to freeze eggs

Whatever you do, don’t freeze whole eggs as they will explode in the freezer. Instead, follow this simple method:

  • Take an ice cube tray (silicone is best) or a muffin tin. We like to use silicone ice cube trays so you can pop those eggs right away.
  • Brush with oil if using a regular ice cube tray or muffin pan. This is the easiest way to get frozen eggs out.
  • Beat the eggs lightly and then pour them into the shells. Make 1 egg per hole, or if you’re using large ice cube trays like ours, 2 eggs will do.
  • Freeze for 2 hours. Then remove them from the shells and place them in an airtight freezer container.

How long do frozen eggs keep in the freezer?

Frozen eggs keep in the freezer during 3 months. Technically, you can freeze them for up to 1 year. But we recommend you use them within 3 months: you don’t have to put yourself at risk of freezer burn.

Thaw in the fridge for 24 hours before use!

Final Egg Freezing Tip! You must thaw them for 24 hours before using them. Put them in the fridge and let them thaw.

Why can’t you make them frozen? Eggs don’t cook evenly. If you place a frozen block in a pan, the outside will cook and become rubbery before the inside has thawed. (We tried it experimentally! Not recommended.)

Can you freeze eggs? Here’s a handy kitchen hack for when you need to use up some eggs… and the surprising way to do it.

  1. Beat the eggs lightly. Brush an ice tray or muffin tin with oil, or use silicone ice trays (that’s what we used). Pour the eggs into the holes, either as single eggs or as two eggs (our ice cube tray is large and each hole holds 2 eggs).
  2. Freeze for 2 hours. Remove the frozen eggs from the ice cube trays and place in an airtight container. Freeze up to 3 months (or up to 1 year: fresher is best).
  3. To thaw eggs, allow them to thaw in the refrigerator for 24 hours. Then cook like a scrambled egg!
