This coleslaw was supposed to be a shredded brussel sprouts salad that’s all the rage right now. But Alex and I had a savoy cabbage on hand. It turns out that Brussels sprouts and cabbage belong to the same family of vegetables, so they taste similar. Grate savoy cabbage and its curly leaves look like crushed Brussels sprouts! It makes a very tasty coleslaw tossed with tart apples, toasted nuts and a tangy dressing. That’s how it’s done!

How to make coleslaw
This salad idea was made from a savoy cabbage that Alex and I picked up at the farmer’s market. We cut the cabbage into thin strips and combined it with tart apples, which we also bought at the market. This results in an incredibly delicious mixture! Savoy cabbage strips are little confetti-like streamers accompanied by crunchy apples and crunchy nuts. It was just the right balance for our meal of wild rice stuffed squash and roasted rosemary potatoes, and it makes a great fall or winter salad for any meal.
To prepare this coleslaw, it is very simple. Here are the basic steps:
- Cut vegetables: Finely chop the cabbage and chop the apple.
- Prepare dressing: Mix an apple cider vinegar and olive oil vinaigrette with some maple syrup.
- Roast nuts: Roast the walnuts in a pan.
- Surcharge: Mix everything with some Parmesan or Pecorino Romano and serve! The result is an incredibly refreshing winter salad that pairs perfectly with almost any main dish.
What is savoy?
Savoy cabbage is a type of cabbage with a green color and ruffled leaves. When thinly sliced, the leaves look like beautiful flaky confetti. Savoy cabbage has a mild flavor and its leaves are much more tender than kale.
Can you replace regular kale with savoy cabbage? Not really. Because of the differences, we don’t recommend substituting savoy for kale in this recipe. If possible, try to find savoy cabbage for this one: it can be found at most major grocery stores!

The description
This savoy cabbage salad is a delicious mix of cabbage, apples, walnuts and a Parmesan drizzled apple cider vinaigrette.
- ⅓ cup olive oil
- 3 tablespoons Apple Cider Vinegar
- 3 tablespoons maple syrup or honey
- 2 pinches of kosher salt
- Freshly ground black pepper
- ½ cup Mother
- 1 Savoy cabbage*
- 2 apples
- ½ cup shaved Parmesan (or Pecorino Romano)
- To make the dressing, whisk together olive oil, apple cider vinegar, honey, kosher salt, and freshly ground black pepper.
- If desired, toast the nuts by placing them in a dry pan over low heat for a few minutes, stirring frequently, until lightly browned and fragrant. Immediately remove from heat in a bowl.
- Thinly slice the cabbage. Core and dice 2 apples. (If you’re not eating right away, drizzle apples with a little lemon juice to keep them from browning.) Using a vegetable peeler, grate Parmesan or Pecorino Romano.
- To serve, place cabbage on a serving platter, then garnish with apples, nuts, cheese and dressing.
Remarks
*Use savoy cabbage in this recipe, which is light and fluffy; Avoid substituting kale or red cabbage as they have a very different texture.
