But you can adapt this recipe however you like! (See below.) The main ingredients in this scrambled egg with vegetables are:

You do not want to eat eggs with breakfast vegetables? Use tofu instead! This tofu scramble is so packed with savory flavors it tastes remarkably similar to eggs! Alex and I aren’t 100% plant-based, but we love tofu scramble when we want a vegan option.

  • 2 tablespoons olive oil
  • 1/2 Red onion
  • 1 peppers (or 1/2 Red and 1/2 orange)
  • 4 cups baby cabbage or spinach
  • 1 tbsp chopped chives or other fresh herbs
  • 4 Eggs or this tofu scrambled eggs
  • ¼ cup grated Colby cheese or crumbled goat cheese (optional)
  • ¼ teaspoon kosher salt
  • Freshly ground black pepper
  • Avocado slices for serving

  1. Prepare the vegetables: Finely chop the red onion. Cut the peppers into large cubes.
  2. Prepare eggs or tofu: In a medium bowl, crack the eggs and whisk well. Stir in shredded cheese, fresh herbs, kosher salt, and plenty of freshly ground pepper. Or complete Stage 1 of the Tofu Scramble.
  3. Cook Vegetables: Heat the olive oil in a large skillet over medium-high heat. When hot, add the onion and peppers. Cook, 3 to 4 minutes, until tender and just beginning to brown, stirring occasionally. Reduce the heat to low. Add a pinch of salt and the baby lettuce. Cook for 30 seconds until tender. Remove and reserve.
  4. Boil eggs or tofu: Keep the heat down. Pour the eggs. Cook for 20 to 30 seconds. If the eggs are just beginning to set, use a flat spatula to scrape off portions of the eggs, stirring gently constantly, until cooked but still tender, about 1 minute. Or do step 2 of stirring the tofu.
  5. Add the vegetables and serve: Return the vegetables to the pan with the eggs or tofu. Stir for a few seconds until combined and warmed through. Serve immediately.
