When Alex said he would make me braised veggies, I was skeptical. Then I tasted them and immediately exclaimed, “Wow! These veggies taste like they’ve been roasted under a chicken all day. While they’re plant-based and healthy, they’re loaded with flavors that take convenience to the next level. These braised veggies are the perfect accompaniment to any main course, along with the jewel-colored purple onion and orange carrot. Ready to stew?

How to Make Braised Vegetables (Easier Than You Think!)

Braised veggies sounds fancy, but here’s the thing. They’re humble and easy to make! What is stewing It is a cooking method in which food is sautéed at a high temperature and then cooked in liquid in the oven. This technique is often used with meat, and often the vegetables are braised at the same time as the meat. But you can also stew vegetables on their own! Here are the basic steps on how to do it (or go to the recipe below):

Step 1: Cut the vegetables into small pieces, then sauté the onion, carrots and celery.

While you preheat the oven to 350 degrees, cut the vegetables. Vegetables can be cut into large pieces here (approximate size see below). You choose a rustic atmosphere. To stew the vegetables, you need a Dutch Oven or a large cast-iron pot with a lid. Drizzle with olive oil and sauté the onion for 2 minutes, then add the carrot for a further 2 minutes. This softens the tougher vegetables and preserves the flavor.

Step 2: Add the potatoes, spices and water to the pot and cook for about 45 minutes.

Then add the remaining ingredients: potatoes, garlic, herbs and balsamic vinegar, which gives a tart undertone. Add water and cover the pot. Now comes the easy part: pop it in the oven and bake for 45-55 minutes, until the larger chunks of veggies are tender when you pierce them with a fork. An amazing aroma will begin to fill your kitchen!

Step 3: Remove the vegetables and reduce the cooking juices until thickened. So serve!

Once the stewed veggies are tender, use a slotted spoon to transfer them to a bowl. Here’s where it gets refined: you’ll notice there’s plenty of juice left at the bottom of the glass. You put the pan back on the stove and let it simmer for about 5 minutes until the juice is reduced by about half. Then you can pour this sauce over the vegetables before serving. It’s flavorful and savory and enhances the flavor even more!

  • 1 medium yellow onion
  • 1 medium red onion
  • 2 big carrots
  • 2 celery ribs
  • 4 medium red potatoes
  • 4 Garlic cloves
  • 2 tablespoons olive oil
  • 1 teaspoon every dried oregano, tarragon and thyme
  • 1 teaspoon kosher salt
  • 2 tablespoons balsamic vinegar
  • 1 cup the water

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Cut the onions into large strips. Peel and cut carrots. Slice the celery. Cut the potatoes into large chunks (no need to peel them). Peel garlic, leave whole.
  3. In an ovenproof Dutch oven or cast-iron skillet with a lid, heat the olive oil over medium-high heat. Add the onions and cook for 2 minutes, stirring occasionally. Add carrots and celery and sauté 2 minutes until golden brown. Remove from fire.
  4. Stir in potatoes, garlic, oregano, tarragon, thyme, kosher salt, and balsamic vinegar. Add water and cover the pot.
  5. Place the pot in the oven and cook until the larger vegetables are tender, 45 to 55 minutes.
  6. When the vegetables are cooked, use a slotted spoon to transfer them to a plate. Place the pan back on the stove and let the pan juices simmer for 5 minutes, until reduced by about half. Pour the juice over the vegetables and serve.
