These Healthy Blueberry Oatmeal Muffins are magical: Blend oats, bananas, and blueberries in a blender. They are simple and irresistible!


  • 1 ½ cups mashed ripe banana or 3 large very ripe bananas
  • 2 Big Eggs
  • 2 cups Oatmeal and more for garnish
  • ¼ cup neutral oil (sunflower, vegetable or grape seed oil)**
  • ¼ cup pure maple syrup
  • 1 tbsp pure vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking powder
  • 1½ teaspoons Cinammon
  • ¼ teaspoon kosher salt
  • 1 Stack blueberries in a mug
  • Turbinado sugar for garnish (optional)

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Mash bananas. Place bananas, eggs, oatmeal, oil, maple syrup, vanilla, baking soda, baking soda, cinnamon, and kosher salt in a blender. Mix everything together over high heat for a minute or two until a smooth paste forms.
  3. Add blueberries to blender; Stir gently until smooth.
  4. Place 12 muffin cups in a muffin tin and divide the batter evenly between the cups. Sprinkle with turbinado sugar (or additional rolled oats) and press gently.
  5. Bake until a toothpick comes out clean, about 30 to 35 minutes. Remove from the muffin tin and let cool for a few minutes before serving. Store chilled or frozen.
