A few notes on the Blueberry Banana Ice Cream recipe: We used twice the amount of yogurt listed for this recipe to mix it up, and it still required quite a bit of scraping and pureeing. We also added a little maple syrup and a squeeze of lemon juice to bring out the flavor, but depending on how ripe the bananas are, yours might not be. Enjoy!

The description

This Vegan Blueberry Banana Ice Cream is bananas and berries mixed together in a healthy version of ice cream! Sometimes called “beautiful banana cream,” it’s that good.


  • 2 ripe bananas, peeled and sliced 1– knobs
  • 2 cups frozen blueberries
  • ¼ cup Coconut milk or plain yogurt, plus more as needed
  • maple syrup (optional)
  • lemon juice (optional)

  1. Place the banana pieces in a single layer on a tray and freeze overnight.
  2. Just before serving, place the frozen banana slices, frozen berries, and coconut milk or yogurt in a food processor and puree until falling apart. Scrape the sides of the bowl, then blend over high heat until smooth and creamy. You can add a little more milk/yogurt to make it easier to work with, but remember, the more liquid you add, the sweeter the end result will be.
  3. If desired, add a tablespoon of maple syrup and a squeeze of lemon to enhance flavor. Pour into bowls and serve immediately. Ice cream doesn’t refreeze well, but it’s quick and easy to make if you have the prefrozen fruit, so getting it fresh shouldn’t be a problem.
