As much as we like to cook for two, we like to cook with or for other people. There’s something about talking while chopping vegetables that just feels right. To the right. Over the last few years we’ve involved friends in our cooking process, inviting them to cook, taste and hang out while we photograph the food (and if they’re lucky, a model in hand). And finally we eat – although it is usually cold at this time! Adding a community to our cooking process and sharing it with others makes it a lot more enjoyable. How to make vegetarian lettuce wraps

Our friend Russell has been with us on some cooking and filming sessions (here’s the most famous picture with his hand) and claims he’s our “biggest fan”. He is an engineer, runner and passionate cook who is always cooking something new, always healthy and often vegetarian. We joked a while ago about him contributing a recipe to our blog and a few weeks later he cooked it with us in our kitchen. This guy delivers.

These are Russell’s vegetarian salad wraps (which are also vegan salad wraps) and it would be no exaggeration to say that this is one of the best salad wraps I’ve tried. The combination of guacamole, flavorful chipotle beans, and mango salsa is an explosion of flavors and textures. For a veggie salad wrap, they’re surprisingly filling. And the health factor can’t be beat: they’re packed with vegetables and suitable for many diets. Although it takes a little time in the kitchen to assemble all the components, it was time well spent. It’s a great option for dinner with friends or just a night out, maybe to celebrate Cinco de Mayo!

These veggie salad wraps are so delicious with homemade guacamole and mango salsa! It may take some time to prepare all the components at home. The prep time for salad wraps below doesn’t include the mango salsa and guacamole, so plan accordingly. If you don’t have that much time before serving, do the following:

  • Use good quality store-bought guacamolee. WHERE
  • Use store-bought mango salsafound in some grocery stores.

The description

These savory veggie salad wraps are filled with black chipotle beans and topped with tangy mango salsa and guacamole.


  • 1 Mango Salsa Recipe (or store-bought mango salsa; fresh is best!)
  • 1 easy guacamole recipe (or store-bought guacamole)
  • 1/2 big red onion
  • 1 green pepper
  • 1 ½ cups corn (frozen or fresh)
  • 15– ounce can of black beans (or 1 ½ cups cooked black beans or Instant Pot)
  • Seven– ounces chipotle peppers in adobo sauce (1 pepper plus 1½ tablespoons spanish seasoning and marinade mix; omit pepper if desired)
  • 2 tablespoons olive oil
  • 1 teaspoon every Oregano, cumin and paprika
  • 1 teaspoon liquid smoke
  • 1 teaspoon kosher salt
  • Ground fresh pepper
  • 2 Bibb lettuce heads

  1. Chop the red onion. Chop the green pepper. Place them in a bowl with 1 ½ cups of corn. Drain and rinse black beans. Chop the chipotle pepper (if using).
  2. In a large pan, heat the olive oil over medium-high heat. Add red onion, green peppers and corn and sauté for 5 minutes, stirring occasionally. Add black beans and oregano, cumin, paprika, liquid smoke and kosher salt and a few freshly ground peppercorns. Add ¾ cup water and cook until water boils, about 5 minutes.
  3. Meanwhile, remove the lettuce leaves and wash and dry the lettuce.
  4. To serve, spread guacamole on a lettuce leaf, then top with black beans and mango salsa. Serve with homemade tortilla chips, if you like.

Remarks

The prep time below does not include preparing the mango salsa and guacamole at home. Be sure to plan the schedule accordingly.
