Is there anything cozier than blueberry pancakes? Just the aroma of the griddle is basically the equivalent of a physical hug, right? Alex and I aren’t exactly breakfast people: but we are Blueberry Pancakes. We usually eat ours around lunchtime or as a midnight snack — but any time of the day: these babies get there. These vegan blueberry pancakes are moist, a little tart from the berries, and just sweet enough. Moistened with maple syrup, they’re everything a pancake should be. And they are completely plant-based! Read on for our secrets.

How to make vegan blueberry pancakes

This recipe for vegan blueberry pancakes is based on ours Buttermilk Blueberry Pancakes, a classic take on the buttermilk pancake. They were so incredibly delicious that we knew we had to make a vegan version too. Because breakfast must not be limited to dairy products! This recipe is perfect for a plant-based breakfast: and toddlers love it, so it’s one of our top vegan recipes for kids.

Here’s what makes these blueberry pancakes a vegan recipe:

  • Use a flax egg. Pancakes need a binder to hold them together on the griddle. Flax Eggs to the Rescue! A flax egg is a mixture of ground flaxseed and water that forms a gel-like binding agent. Here it works perfectly.
  • Use almond milk + apple cider vinegar. It might sound a little strange, but using vinegar in milk is a standard substitute for buttermilk! Buttermilk is essentially an acidic dairy product, so adding acid to a plant-based milk works as a vegan substitute.

If you master these two tricks, the rest of these vegan blueberry pancakes will look like a regular pancake recipe. Mix the dry, then the wet, then the batter. Then cook on a hot plate until golden brown.

Make sure to use neutral oil like grapeseed oil or vegetable oil to prepare the vegan pancakes. We have used coconut oil before and the smoke point is quite low – suffice it to say there has been one incident of oil spitting! Our favorite oil for cooking pancakes is grapeseed oil. What is the best way to add blueberries to pancakes?

This may seem like a silly question. But if you’re like me, you didn’t grow up eating blueberry pancakes, and you didn’t eat them in college either. So you don’t know the answer to this very important question:

Ask: Should I add blueberries to the pancake batter myself? Or do I add the berries once the pancakes are on the grill?

Answer: AFTER the pancakes are on the grill!

How do you get the most even distribution of blueberries? Place them directly over the pancakes while they’re on the griddle. Soaking in the batter itself results in lumpy pancakes and uneven distribution. You’ll notice that when you add the blueberries to the pancakes on the griddle, the “top” side of the pancake doesn’t really show much of the blueberries visually. And that’s it! You can see them when you cut down the middle.

How to serve these vegan blueberry pancakes

We’re guessing you don’t need many ideas for serving blueberry pancakes! Simply drizzle with maple syrup and enjoy! But if you want to step it up a little, here are some ideas:

  • Quick Blueberry Sauce: This thick, purple syrup is out of this world! It’s tart and sweet, with a pure blueberry flavor. He takes these vegan blueberry pancakes on top!
  • Vegan whipped cream: This delicious fluffy cream is vegan thanks to coconut milk. If you’re the whipped cream and pancake type (I’m just for a midnight snack!).
  • Almond Butter: We love serving pancakes with nut butter because it makes for a heartier meal and balances out the sweetness a bit. Homemade almond butter would be perfect here.

These vegan blueberry pancakes are everything you need for a cozy morning: they’re fluffy, slightly sweet and perfectly tart.


  • 1 Flax Egg
  • 1 cup all purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon Cinammon
  • ¼ teaspoon kosher salt
  • 1 cup Almond milk
  • 1 teaspoon Apple Cider Vinegar
  • 1 tbsp maple syrup, plus extra for serving
  • 2 tablespoons neutral oil (vegetable or grapeseed oil)
  • 1 a pinch of turmeric (optional)
  • 1 cup fresh or frozen blueberries
  • Optional: Quick blueberry sauce for serving

  1. Start the flax egg (it should rest for 15 minutes).
  2. Meanwhile, in a medium bowl, whisk together all-purpose flour, baking powder, cinnamon, and kosher salt.
  3. In another bowl, add almond milk, apple cider vinegar, maple syrup, and oil. When the egg is cooked, add the egg.
  4. Add the wet ingredients to the dry ingredients. If desired, add a small pinch of turmeric (our batter was very light and a little turmeric mimics the color an egg yolk adds).
  5. Lightly toss a pan with additional grapeseed or vegetable oil. Heat pan over medium heat. Pour the dough into small circles and place the blueberries on top. Bake pancakes until bubbles burst on top and bottom is golden brown. Then turn them over and cook until done. Serve immediately with maple syrup.
