For the asparagus

  • 1 big bunch of asparagus
  • 1 Lemon, cut into wedges
  • Kosher salt and freshly ground pepper

For the lemon yoghurt sauce

  • ¾ cup (7 ounces) plain Greek yogurt
  • 2 tablespoons fresh lemon juice
  • 1 tbsp fresh parsley, chopped
  • 2 hard-boiled eggs, chopped

  1. Fry the asparagus in the pan: Wash the asparagus. Cut off a few inches from the bottom to remove the tough ends. Sauté the asparagus tips in a dry griddle or cast-iron skillet until tender, about 10 minutes, turning once halfway through cooking.
  2. When the asparagus is done, put it in a bowl. Cut a lemon into wedges and squeeze the fresh lemon juice into the bowl. Mix it with kosher salt and freshly ground pepper to taste.
  3. Prepare Lemon Yoghurt Sauce: In a bowl, mix the Greek yogurt with the fresh lemon juice and chopped parsley. Add kosher salt and freshly ground pepper to taste.
